No. people can turn off the 'last seen' function so no one can see when they were last online on whatsapp. that by itself does not mean you are blocked. I have mine switched off too. or if YOU turned off YOUR last seen then you won't see anyone else's eitjer

Does the test of adding someone to a group work the same if the person you are adding has a business account? Also, what if you can't see the profile pic or last seen time, but CAN see all the info in the bio? Does that indicated being blocked?

None of these are accurate. Many people never use a profile picture so their is always a grey head. 2. If there's never a wifi connection, or WhatsApp is turned off there will only be one tick and lastly you can restrict any or all contacts from adding you to groups
