The reason to why u put a bit of the chocolate mixture in the egg is to introduce the egg to the heat so it wont cook when u put them together :)

You do that with the eggs so they don't scramble because the ganache mixture will probably still be hot and you don't wanna cook the eggs by throwing them in the whole mixture straight away :)

you need to add the chocolate to the eggs so the egg mixture wont get scrambled. if you were to add the eggs to stright up to the hot chocolate mixture you'd risk ruining the mixture :)

if you add all the eggs and don't mix quickly enough it will cook the egg and have scrambled eggs however by adding a small amount it brought up the temp so it wouldn't cook

Putting some of the chocolate into the eggs and then adding it all back into the big bowl is called tempering. If you were to just add the eggs to a hot substance it would scramble them and ruin the dish :)
You add the small amount of chocolate to the eggs to temper them. This means that when you add the eggs to the chocolate they don't become scrambled eggs, the heat from the chocolate will scramble the eggs unless you temper the eggs. To temper eggs you add a small amount of the warmer mixture to the eggs (like you did in the video) to let the eggs get acquainted with the heat so that when you add the egg mixture to the other mixture the eggs don't freak and turn into a gross scramble. It is a process that is an essential skill in baking.

I'm supposed to do my homework but instead I'm watching your videos, I absolutely love your videos :)
You do the thing with the eggs to temper them. Since the cream was hot to melt the chocolate, it would probably be hot enough to cook the eggs if you were to just toss them in. By mixing a small amount of the hot chocolate into the eggs, you bring the temperature up slow enough to not cook them, and then they're warm enough that they won't cook once added to the rest of the chocolate. You could also just cool the chocolate before the eggs are added, but that would mean waiting. Ultimately, it just avoids scrambling the eggs in your hot chocolate :)
You put some of the chocolate mixture into the eggs first so that the eggs can get used to the high temperature of the chocolate mixture so that when you add the eggs into the chocolate afterwards, the eggs won't cook and curdle :-)

Hey David, the reason you had to do that egg step is to basically prepare the eggs with some warmth. If you didn't do that step, you would have had scrambled egg chunks in your chocolate filling!

You mix some of the stuff into the eggs before you put them into the intire mixture, because that step prevents the eggs from cooking - and nobody wants to have scrambled eggs in their desserts :)

It's called tempering the eggs. If you add super hot ganache to the eggs without tempering first, some of the eggs will cook from the heat of the ganache. Since nobody like random bits of scrambled eggs in their dessert, you gotta temper the eggs.

Since David was so curious, the reason why you added a bit of the chocolate mix to the eggs was because it is a method known as introducing, slowly incorporating a little bit of 2 different ingredients so you get a bit of a well balanced base and then mixing in the rest for a uniform mixture.

The reason you pour the chocolate in the eggs before you dump the eggs into the chocolate is to temper them. if you just added them in all together the eggs would have just scrambled at the heat of the chocolate :)

That step is because putting all of the cold-ish eggs into the warm ganache mixture will make the eggs kind of scramble/start cooking and using a little bit to adjust the temperature of the eggs before mixing them completely together helps prevent that.
the eggs are done that way to temper them, if you put them directly into anything hot you will end up will scrambled eggs
