Wow! I made this tonight and it was heavenly. I used a cast iron dutch oven and cooked it in the oven at 325 for 3 hours. But I followed your recipe. I have never made the gravy first, like you did, I always made the gravy after the roast was done. But I loved doing it your way. The roast simmered in the gravy and it was so tender. And I’ve never eaten a carrot so darn good. I like to slice my roast like you do so the 3 hours was long enough. Thank you for always making such wonderfully tasty meals. I’ve made so many of your meals and never been disappointed. I’m 70, a pretty darn good cook too, but you always teach me something new. Keep up the great work and thank you for your very calm demure. You’re a sweetheart.

Did you cover it ? Or uncovered for the 3 hours.

@@kristywilson7090 Im gonna go out on a limb here and say she covered it. If it cooked for that long uncovered I think the gravy would dry up. I'm going to try Mona's method tonight and cook it covered 2.5 hours, and then uncovered for the last half hour. Yum Yum

I mix the flour mixture with the beef broth and then add it. That way makes it less lumpy. GREAT RECIPE! I love it.

That’s exactly how I make mine with one exception. At the end of the Rue stage, instead of using kitchen bouquet or soy, I use 1 Tblespn of tomato paste. It’s a game changer. The paste extenuates the beef and gravy flavor. Try it sometime. I also use it in soup bases, it really brings out the flavors.

it is perfect, but also for my tastes nothing better with potatoes and carrots than a can or a package of sweet peas. If peas are canned open can partially and pour out salty brine, and rinse the peas by filling and emptying three or four times, if frozen peas, they are salt free. Peace and love! Looks lovely good job Mama!

I bought a slow cooker/pressure cooker combo that has an inbuilt SEAR/BROWN option. So everything that should be seared is put right into the slow cooker. After that, you can choose the faster option (pressure cooking) or the slow cooker option. Having to use another pan to sear or get the onions going, with regular slow cookers, has been a particular "beef" of mine. No longer an issue.
