It was absolutely the best pot roast I have ever made. I've made dozens...but none were keepers. I personally don't like red wine in mine, so I added extra chicken stock. It was perfect! A forever keeper recipe! Thank you Claudia! I made a 2 pounder and kept the same ingredients as is. Had a bit left over on the spice rub, but kept it for next time. My 2 lbs fed 4 people with sides. I'll make the 6 pounds and keep servings in the freezer for next time! I'm jumping up and down all over my kitchen! Yay! Woohooo!
This was the best roast I ever made. I ALWAYS dry everything out. I served 8 people at Christmas and there wasn't a bite left. My kids FOUGHT over the last 1/2 cup of liquid to dip their rolls in. I wish I had a printout of it. I REALLY hope I don't lose this video. Totally AMAZING‼️
This was the best pot roast ever. I used new potatoes and whole carrots. The only change i made was roasting the vegetable in oven at 400 degrees for a half hour. Cooked on slow in crockpot. I had leftovers and heated them in a pan. It reducer the juice to a wonderful gravy. Thank you so much for this recipe.
Ok I am so glad you actually SEARED the meat. so many people shy away from getting it blackened. They get it GRAY. and that really diminishes flavour so much. This was a wonderful, simple and no doubt flavourful meal you have made...!!
OK, I don't cook, but I sent this my wife first and it came out great. My Dad was complaining about my Mom's pot roast, so I sent my parents this too. MY Dad loved it, I loved it. Everyone is happy. Great job Claudia. PS-my irish wife puts potatoes in too, because she's irish.
As a single dad, the slow cooker was my general go to. I'd prep the meal the night before, get up early, turn it on high and my oldest would turn it to low before she went to school. I'd get home and fix the sides. Dinner table rule- everyone sits at the table and no cell phones.

Okay so I made this recipe for my immediate family a while ago. They were very skeptic as they as creatures of habit. One time, I cooked a chuck pot roast in my slow cooker for 12 hours. The roast was so tender that it fell apart into tiny slivers of meat. After that, I placed the rest of the ingredients into the slow cooker, and let all of it cook an additional 5 hours. Made rice and corn bread. Had a delicious meal that day. Since then, I have repeated this same cooking style with ease. Good eating.

Claudia, I will thank you for this wonderful recipe. I made a Pot Roast past week and it did not have very much flavor. After watching your video, I think I fell short on seasonings. I seared the Chuck Roast and added Carrots, Onion and Celery but did not use red wine or enough herbs. Thanks to you, I feel my next one will be better.
Ive done this recipe 3 times now and am bout to do it againin half an hour. I often forget so watch the video for a refresher. Never been so proud of myself in regards to cooking, follow these instructions and OMG!!! Delicious. I had a lot left over once and made a steak and cheese pie without any of the veg. Best pie of my life also!
Great recipe, my family enjoyed. Crockpots tend to impair the flavour of spices so I always use more than I usually would. Another tip, once everything is cooked, scoop the meat and all veggies out with tongs and a slotted spoon and set aside. You'll be left with a crockpot of nothing but liquids and juices, grab your favourite store bought packet of gravy mix and crank the crock to high, whisk it in to turn the juices to a thick and attractive gravy. Slice and re-add your meat and even veggies if you wish. Turn the crock back to low, cover and simmer for a final 10 minutes. Serve, and savour!

This is my second time making this & I love it! And so does my entire family! I used broth & a splash of apple cider vinegar in place of the red wine, & soy sauce in place of the Worcestershire. Doubled the carrots & celery & threw in a bag of mini potatoes! SO DELICIOUS!

Three days ago I discovered this video. Yesterday I bought all of the ingredients and this morning starting at 7:30am, I proceeded to prepare this amazing dinner. I only made a few changes; I added mushrooms and small gold potatoes plus when prepping the sauce-gravy, I added a TBS of Better Then Bouillon. It turned out delicious. We served it with Parker House Yeast Rolls!

If you haven’t yet you need to try it…NOW! I’m a single 68 yr old man I’m not a good cook and I just cooked this roast the day after thanksgiving. It turned out just like Claudia’s video and was so tender flavorful and delicious. I think the key is getting a really good sear on both sides of the meat. Medium high heat, 3 minutes each side. I used 2 tbs olive oil when searing each side and got great sear on both sides. So so good.

Omg!!!! The roast was soooooo tender. My hubby loved it. I will cut back on the sugar just a tad bit. I didn't have worcestershire sauce so I used a dark soy sauce. Overall the dish was delicious!!! Will make again!!!

Absolutely delicious! I used the red wine, left out celery, added potatoes. Making it again for a family holiday get-together. Such rich flavor!

I made this recipe and it came out delicious. I added extra carrots and small dutch potatoes which made it a complete meal.
At what point did you put the potatoes in during the cook?
@@kapadona78 I used those little dutch potatoes, left the skins on and cut them in half. I waited at least an hour to add them to the crockpot.

Hell-o, Claudia. I'd like to thank you for the love and time you put into this exceptionally to-die-for pot roast.
I invited my family over for Christmas dinner and this is my first time I've ever made a roast. And a majority of them were asking for pot roast and this is the recipe for that day. It looks amazing and I love the fact that I can just put in there and let it do its thing. Awesome recipe can't wait to make this!

If you haven’t yet you need to try it…NOW! I’m a single 68 yr old man I’m not a good cook and I just cooked this roast the day after thanksgiving. It turned out just like Claudia’s video and was so tender flavorful and delicious. I think the key is getting a really good sear on both sides of the meat. Medium high heat, 3 minutes each side. I used 2 tbs olive oil when searing each side and got great sear on both sides. So so good.

Tried this recipe a few weeks ago. Came out great. Gonna make it again tomorrow using bourbon to deglaze the pan.

I wish people would recommend a wine to use for cooking in dishes that require it. I’m not a wine drinker, so I wouldn’t know what wine to use.
ANY!!! But Cabernet, Chardonnay or Merlot would be my choice, because reasonably priced and easy to find (and easy to drink).
If the recipe asks for sugar and wine I just use Moscato.
Burgundy for beef is a good choice
If you're not a wine drinker, you can buy red cooking wine or white cooking wine. I think the brand is goya 😊
I always use red wine for beef, and white for chicken and fish. You can also use red wine or cooking sherry in your spaghetti sauce instead of sugar.

Omg!!!! The roast was soooooo tender. My hubby loved it. I will cut back on the sugar just a tad bit. I didn't have worcestershire sauce so I used a dark soy sauce. Overall the dish was delicious!!! Will make again!!!
