We start with making Sugar Free Marshmallows. This recipe comes from Alycia @KetoUpgrade TH-cam- th-cam.com/video/jVki763CD-ES/w-d-xo.htmlugar Free Marshmallows 140g or 2/3 Cup Water 500g or 3 Cups Allulose Place water and Allulose into a saucepan and bring to a boil. While waiting for mixture to come to temperature. Continue to cook until mixture reaches a temperature of 320 degrees on an instant read thermometer. Into a stand mixer bowl add 120g or 1/2 Cup water and 28g or 3 heaping Tablespoons unflavored Gelatin. Sprinkle gelatin over water to bloom. Set aside until your allulose and water mixture boils and reaches temp. Then add boiling mixture to bloomed gelatin while mixing on low. Then mix on highest speed until soft peaks form. Then add 1/4 teaspoon salt and 1 Teaspoon Vanilla extract and whip to a stiff peak. Pour marshmallow mixture into a grease 8x8 silicone pan or pan lined with greased parchment paper. Spread and smooth out. Lastly sprinkle top with powdered sweetener (Swerve) Let marshmallow set 4-6 hours to firm or overnight. Scotcheroo Ingredients: 3 Tablespoons Butter 10 oz . Sugar free Marshmallows or 3 Cups 210 g or 3/4 Cup Peanut Butter 45g or 1/3 Cup Powdered Sweetener (Swerve) 3-4 Drops Butterscotch Flavoring Oil (LorAnn) 6 oz. Crushed Pork Rinds Scotcharoo Recipe: Melt 3 Tablespoons Butter into a medium saucepan. Add 10 oz marshmallows (about 3 cups or half of marshmallow recipe) Let the marshmallow melt while stirring. Then add 3/4 Cup or 210g peanut butter and stir to combine. Next add in 1/3 or 45g powdered sweetener (Swerve) us more or less for desired sweetness. Add about 3-4 drops (LorAnn) Butterscotch Flavoring Oil. Stir. Now pour mixture over 6oz Crushed Pork Rinds. Crush into rice Krispy size pieces but not so crushed that it resemble pork panko. Combine together to coat all pieces. *Gently press* into a 8x11 pan lined with parchment paper for easy removal. (Do not firmly compact this batter) because your end result will be hard and will not have that chewy pull that a traditional rice crispy treat would have. Now melt 1/2 cup sugar free chocolate chips and a 1/2 cup salted caramel chips in microwave. 30 second intervals until melted. Careful not to over cook. Pour melted chocolate over scotcharoo mixture and spread evenly. Place into refrigerator to set. Cut into bite size pieces. Enjoy! This is a family favorite dessert that we always have at holiday gatherings. We're not adding the macros for these at this time. All we need to know is that these have way less carbs than the original. We're planning on enjoying them this holiday season. After all they're a guilt free indulgence and low carb for this holiday season.

I was never lucky enough to taste these. They look delicious. I think I would cover half of the dessert bars with milk chocolate and the other half with dark. Does that sound like a good idea?
This may be a really dumb question, but never having made these cookies before (or marshmallows), I have to ask: I understand why you would want to let the marshmallows set up if you want to use them as typical marshmallows. However, is there any reason why you could not simply use 10 oz of the batch before they set up in your cookies? It seems odd to have them set so you can melt them again. Maybe I missed something about the cookies while I was thinking about the marshmallows. Easily distracted…LOL
