I only learned how to use an espresso machine yesterday, my first cafe job ever, and I'm really nervous because I didn't know how to make a mocha... This is really helpful - it's good to know that there isn't one right way to make one. I know I'm going to be really crap for the first while so I hope they're patient!

Closest thing to espresso is probably the Bialetti Moka Express stovetop device. I have tried making espresso countless times on my aeropress but the closest I've ever gotten was far from a real espresso. I have better results using my stovetop
Second that moka pots makes great coffee. You can tamp the grounds in the moka pot very lightly (at your own risk) like i do to get a really thick espresso. Latte art is also possible as the coffee from moka pot can be really thick and dark in colour.

Cooking chocolate is generally not sweet enough for our liking. You could, but we use Monin chocolate sauce so that it is easier to stir and incorporate into the mocha.
best way to make is with unsweetened cacao powder, sugar, stir into espresso shot and add milk. also can add chipotle or cayenne pepper for spicyness:)

I was wondering if it makes a difference if you leave the portafilter in then pull the shot compared to pulling the shot as soon as you put the portafilter in the group head. I have been told it takes 3 seconds to burn the top layer of coffee. Could you taste test this.

We use Monin chocolate sauce for our recipes. You could do that or pick up a powder or ... the options are endless :) For these, we did 2 oz of espresso to about 10 overall oz of volume for the drink. These ratios are going to be determined largely by your personal taste. - Kat

You should do first brew the coffee and don't leave the infuser when you insert the circle basket.. Because the coffee will not good taste and also the milk will do best front milk not get bubbles..
To make great coffee one thing I advise you do is be careful with the French press. Many people have it in the home as it is an older method although it can make terrible coffee if one lets it sit for a long period of time. It overbrews. Electric coffee makers or other methods of preparing coffee mean that it is sieved or that water goes through grind into a pot or cup. If it sits that way it does not overbrew. Overbrewing means coffee gets bitter and oily and clumpy and tastes of radiator water. Some bitterness is desirable in coffee to ensure it has a fresh, good crisp bite. Although that is a different sort of it that does not come from sitting on the press. If you make it on the press you have to transfer it if its to cool and sit for cold coffee once its brewed or drink it right away. Too much oiliness in coffee is never good (though some is normal and good) and if it sits around on used grind that can happen. Also it can be problematic to health to consume overbrewed coffee as different chemicals are released that way

If you use cocoa - beware that since most chocolate today is low quality they can charge a bomb for good quality cocoa or chocolate and I find its never worth it

Arno you are right, ideally you should make your shot as soon as you put the handle in the machine, I think it's the machine that she was using do not have the function to steam milk and make espresso at the same time. Anyway for whatever reason, the crema doesn't looks great for me in the video.
Why not just let the chocolate melt in the shot and then pour over the steamed milk? :) It's probably the easiest way and you get amazing color shapes, especially with extra dark chocolate! :P

at 5:05 if the machine is THAT LOUD push the steamer furthur down. It should sound like it did at 5:30. You want smooth FOAM, not big bubbles

I'd try pouring the steamed chocolate milk into the cup, then pull the shot into the cup.

Ive found that combining the milk with powdered chocolate can give you just as good foam as with just milk...
