Coffee Menu Explained - What the most common coffees are and how to make them

  • If you're just starting out in coffee or just starting a new job as a barista and you're not sure what each of the coffees are and how to prepare each one then this video is for you! We take you through each of the most common coffees like Piccolo, Cappuccino, Latte, Flatt White, Long Black etc and show you exactly how to make them.
    The way that Jimmy is producing the coffees is what you will find in your typical Australian Cafe or Coffee Shop. The drinks and how they are made can and will vary for overseas baristas so keep that in mind. This video however will give you a good starting point.

    I’ve been a bar tender for years and my only experience in the world of coffee so far is making shots of espresso for espresso martinis. Tomorrow, however, I start training as a barista for the first time and I’m pretty excited so I wanted to get out there and see if I could learn anything online first. This is by far the most informative, succinct and well made video I’ve found out there. Thanks for the help!

    Thanks for the explanation on milk to shot ratios and how that constitutes each drinks name. Also explaining the amount of air introduced into the milk and for what durations of time. This determining the milk texture needed for said drinks.

    Thanks for sharing. This was great information. I am actually opening a coffee shop in our high school and my culinary students will be running it. So I am having a crash course in all these different coffees so I can teach them this fall. I drink my coffee black so this is all new to me.

    Thank you for good information. I lived in Melbourne for 7 years and now came back to my home country which is in Asia after covid pandemic. I really miss Australian coffee. I could have GOOD coffee any cafe in Melbourne that I go. Coffee in this place here, cannot really call coffee. It’s almost like coffee ‘flavoured’ drink. One day I want to bring Aussie coffee culture in here South Korea. That’s my new dream now

    When I worked as a barista years ago the owner wanted us to do all cappuccinos as dry caps so that customers knew the difference between caps and lattes. Tbf it wasn't a specialty coffee place and our prices were low so most of our customers expected the drinks like that.

      At the end of the day, you need to keep the boss and the customers happy. If you can have an opinion and make changes, great, but don't loose your job trying.

      If I could pitch in, I'd like to see the best way of making a decent or semi- decent espresso shot by using pressurized basket on a cheap, commercial machine. We are not all blessed with decently payed jobs and some of us live in a 3rd world countries, where barista equipment cost a fortune... Much appreciated.

    I work at a coffee shop and this taught me more than my work did hahahah - our only difference is that our Long Macs are in glasses!

    I have argued so many times with people that flat whites and lattes are different in terms of foam amount and always people disagree and say its just the cup type ( glass vs cup w/handle) but I feel VINDICATED now thankyou lol.

      I get this when I make a cappuccino. Getting people say it's too much foam. I think what some people really want is a latte with chocolate powder half the time 🤣🤣🤣 I'm not sure that too many people understand the foam ratio

    I think my brain stopped working after the long black (third one). But it looks so fun to do when you get the basics down. This probably isn't the work field for me n my horrible memory but it's an awfully beautiful, aesthetically pleasing hobby & work 😍

    We call the "piccolo" in my hometown Trieste, Italy, "capo in b" (capo = cappuccino, in b = bicchiere (in a glass)). I think it is the only place in Italy where a "cappuccino" is one shot with milk in a small cup. In the rest of italy, a cappuccino is one shot with milk in a medium cup.

      You can only buy pre ground coffee, or buy a Cheap used one or a hand grinder

    I've been a barista for the last 9 years and over the years, I have heard some unusual requests. The worst one is a 20oz cappuccino (I blame Starbucks for that one...I blame them for a lot of things lol) We have a lady that always orders a 20oz cappuccino. She not only wants it bone dry but also wants it breve. Because of the high-fat content in the ½&½, it makes it extremely difficult to get that much foam for a 20oz. We have to steam at least 3 pitchers just to get enough to fill the cup. I feel that some people just like to make coffee more complicated than it should be. I do have a question though. We have another regular lady who is extremely picky and wants absolutely no foam. She complains every time and it's gotten to the point where she thinks the crema froth is foam and complains about that. It has gotten so bad, that we've talked about just microwaving her milk. Do you have any tips for "no foam" lattes? Great video btw!

      Yes the no foam, take a moment to clarify with her a out Crema, if she drinks instant coffee she may be a little confused. Once she can see the Crema in a glass of espresso, if she says I don’t want that, then you need to politely explain it’s not possible. 👍🏻

      @@ArtistiCoffeeRoasters Yes, we have tried to explain it to her. A few weeks ago, one of my baristas made her coffee and was extra careful not to get any foam in it. My barista said all she saw in the cup, was the froth from the crema. But the lady complained about the "foam", demanded a spoon and proceeded to spoon out what my barista says was just coffee. Short of letting her shots die and microwaving her milk, I don't know what else we can do, other than explain to her again the difference. Although I do like the way you referred to the cream as froth, rather than foam. Maybe if we try explaining it using that analogy instead, she would get it. Thank you for replying! :)

      I'd say, let her move on to another cafe. I've had such bad coffee at places like Starbucks, maybe she just needs to go to a place where they don't do coffee well but give her what she wants. That's usually the case. She clearly isn't a coffee connoisseur.

    A flat white has 2 shots in it and a bit larger on the serving size , prolly like a 20 ml increase in the glass. Other than that, well done sir... Also would be nice to distinhuish dry and wet cappuccino

      We don’t do a dry or wet cappuccino here. Can you explain to me what that is?
      I agree that lattes tend to have more milk, around 30ml, served in a glass instead of cup. However that goes out the window in takeaway cups anyway. We also use the same amount of coffee in the cup for a latte to cappuccino here.

      Wet = Less foam in a cappuccino
      Be sure to keep foam and milk ratios consistent throughout the pour. Most people prefer dry where I'm from so it's pretty simple, when making a wet it can get complicated. Sometimes I feel like the wet is just a mini latte (piccolo with less foam) instead of a cappuccino.

      They are the Duralex Picardie range. 90ml for piccolo, 220ml for latte.

    In my experience, pulling ristretto gives a very different taste to espresso (because coffee is less extracted increasing acidity) meaning that if a customer orders a medium latte (double riz) it will taste different to a large (double espresso). How does your cafe work around this?

      Yes your correct these do taste different, we look to try and make the best coffee based around the specific cup size, it’s near impossible to have varying sizes taste the same. So we just look to make each size the best possible

      There are heaps of small cafes that you can start in. You might be aiming a little high and yes, you’ll need more experience.
      Coffee training courses like ours help too.

    I just need some additional help understanding volumes. If I have an 18gram puck, and it produces a 36gram yield in 30 seconds into two separate coffee cups, can I use each of those cups to then make a separate cappuccino thereby creating 2 cappuccinos with one 18gram puck? Or, is one 18gram puck needed for each cappuccino? Thank you!

      Yes, you could make 2 drinks, however this depends on the size of the cups. Based on those numbers, you wouldn’t want the cups bigger than 170ml each otherwise the ratio of coffee to milk would be wrong. Our cappuccino is 22.5g in, 45g out in 30-32 in a 190ml cup. We are happy with the strength we get from this however that is based on our coffee.
      If your only using 18in and 36out, I’d suggest doing a double ristretto to give yourself enough body and strength.

    What I'm jealous of as a Barista coming from a smaller cafe is the equipment he is using. Machine is nicer. Has and automatic tamper. Jug cleaner and milk dispenser. The rubber piece attached to the table to catch excess grinds and reduce tamping noise (we use that shitty piece of metal that is attached to the grinder). NO SCALES. Coffee polishing tool. Lastly, a Barista that is not lazy.
    I cannot express how bad small cafes can be. The owners never pay for good equipment, everything we use is prehistoric, even the coffee machine. On top of all that, we don't have Baristas that care or are straight up lazy. Grinder settings never changed throughout the day when needed, portafilter never cleaned (especially when busy). What's even worse is that our manager and thinks it's ok to give customers old shots just to speed up the rate of coffees made. I'm just embarrassed at my cafe when sometimes they stress the importance of good coffee skills and most other times they just don't care. As long as customers don't complain and continue to come back it just gives cafes the excuse to not make good coffee. I've seen places where the owners still use thermometers when steaming their milk. No one uses a thermometer unless you're and absolute beginner.
    Demographics also plays are a large part. The part of Sydney I work in, customers can't tell what good coffee is meant to be like or thinks we are the best in the area. Some just don't care as long as it's not below average coffee. We get all sorts of requests like 1/4 strength, 5 sugars, extra hot (1 customer even wants burnt milk).

      I honestly work in one of these places. I'm 100% with you on this....embarrassed to say I still use a thermometer but that might be out of fear because the only couple of times I tried without one and went right that's hot enough I tested with a thermometer and it wasn't hot enough...I must have wussy hands 🤣🤣 I would love to not use one though. But also we are made to use one at my work because for all the reasons you mentioned basically and some people would probably serve cold coffee.

      70ml espresso cup.
      90ml piccolo cup.
      170ml tulip for long black.
      190ml cup for flat white & cap.
      220ml for latte, HC & mocha.
      This is what we use and recommend but everyone has their own opinions on milk to coffee ratios.
