A staple of every FPS set in a time from the 50s to the far future. Interesting to see many different game developers interpretation of an AK-47/AKM. Just about none of them perfectly replicate any specific variant of the AK, be it the type 1-3 47s or various AKMs The most accurate models I saw are from Insurgency: Sandworm and RS2 Vietnam. COD MW 2019 has a well detailed and animated model, but is a bit off when compared to the real thing. Also having played Insurgency and MW, Insurgency has the most "realistic" feel out of the two.
The AK used in Tarkov's clip is just a mix of different AK parts. Since it's set at ~2030, there are no original AK-47s but rather AKMs (along with a dozen other variants of different calibers etc.) and those are truly well modeled.
I disagree, mw set the standard for reload animations in gaming. Also the guy who worked on the sandstorm animations is working on the mw2 animations along with the team from 19
The Tarkov one is about as accurate as it can get, the only thing is you have the option to change out a lot of parts including the handguards, dust covers, etc etc. So maybe the one in the video doesn't look exactly like you expect, but only because it's been modified. The base guns in the game are as accurate as possible.

Having said that I'd say half of the animations are either extremely difficult or impossible to replicate in real life, unless you're an experienced combat operator. I do own a Yugo AKM and can not in any way hold two AK mags staggered in one hand, let alone actuate the mag release and swap them out. I'm sure if I had bigger hands and better coordination it could be pulled off with some practice. Even the trick of using the fresh mag to knock out the empty one is very hard to pull off, more so if using Yugo pattern mags with the pseudo bolt hold open. But it's definitely more in the verge of impossible which is fine as it suits the game and still looks cool.

You can just remove the dust cover and start washing the mud out quite easily. The mud with the pebbles will be more problematic tho, but yeah a simple wash is enough. Most piston guns can shoot in water so using water to wash out mud probably shouldn’t affect reliability by much if at all.

Yes, most of the AKs yall see why be used with the traditional reload. But in the ME the AKs were different and had a hard time to chamber a round. iirc a lot of the guns were intentionally changed to make more parts visible, like putting the charging handle on the left instead of the right for the AK and using spiced up movie sounds. The MP5 in Black is sampled from the MP5 in Die Hard, for example.
