In order to make a well balanced cocktail you need to make sure that the measurements are precise and you don't always pour the exact same amount while free pouring, not even when you're measuring. Most cocktailbars use jiggers/measuringcups but there are some who use free pouring, but if so they are practicing a lot with water to make it right. Meehan isn't new to bartending. In fact he's a legend to many bartenders around the world.
Free pouring is accurate when done correctly, but is still rarely 100% on point. It is more of a tool for speed in busy service, if you have the time to use measures, you result in a more consistent cocktail. Besides, it's an instructional video, many people watching won't be bartenders themselves, therefore they'll more than likely require measures to make their drink.
