Great question. Vegan butter, yes. Dairy butter, no. There are many brands that offer vegan butter. Look for the vegan or plant-based labels. I hope that helps. :)

Hi! I would say yellow/ organe would work best, because they tend to be firmer. However, since you are mixing them with the mash, green should work just fine!
It looks like she's using shredded vegan cheese, but you could buy a block-style vegan cheese and shred it. I actually think that would melt better. It's so great that there are lots of vegan cheese options in stores these days. For me, I'd omit the vegan cheese altogether thought as I prefer a lighter version. Personal preference. It won't be as rich, but I think it will be delicious too. :)
For all haiters complaining about many ingredients - consider additional ingredients as "optional." Potato and lentils could be eaten just as separate meal. Enjoy! The tasty mushroom gravy is for those who love to cook 😋

That's how I got here. Have no idea where I'd get the pomegranate juice from. Is that the fizzy drink like cranberry or grape juice? Or did she make that fresh? Not as easy as advertised but def looks delicious. Would cut back on the butter & cheese probably. But most definitely looks like a good dish. Hope it tastes good too.

Haha. Me, too. I'd skip the butter and cheese in the mash and just mash it with a little veg stock. Instead of the roux, I'd blend a little cooked potato or butternut squash - it would work well as a thickener, I think. 🤔
@WeCookVegan yes you can daute the mushrooms and add them for additional flavor however I feel as though people should cook the recipe first and then make adjustments accordingly. Sautéed mushrooms in butter ate quite tasty with aromatics however due to the cheese, dry mustard, nutmeg and pomegranate juice, one must first taste it together before you try to build

it acts similarly to a red wine, just non alcoholic. it obviously adds liquid to the mixture, infuses the gravy and enhances the taste!

butter and cheese are not vegan. Also there are more ingridients than just potatoes and lentils.
Plant based butter and cheese are vegan and in fact plant based butter and cheese are so much better if vegan.

The mushrooms should be pan fried with garlic onion and thyme first. Boil mushrooms are not tasty. The dish is otherwise beautiful.

@WeCookVegan yes you can daute the mushrooms and add them for additional flavor however I feel as though people should cook the recipe first and then make adjustments accordingly. Sautéed mushrooms in butter ate quite tasty with aromatics however due to the cheese, dry mustard, nutmeg and pomegranate juice, one must first taste it together before you try to build
