This was indeed incredible. I used it as a filling for stuffed swiss chard rolls. It was perfect. The flavor was mild and the texture was so close to that of meat in the filling. It holds together beautifully and has just the right feel. It firms up in the cooking so keeping it loose is the key.
I've been making stuffed cabbage since I was 16 and since going vegan I've been looking for a decent substitute for ground meat and this is it. I can't wait to use it in Grandma's stuffed cabbage recipe. Thank you so much. It seems every recipe of yours is a winner for us.

This is a nice change from my regular lentil meatballs recipe. These are softer and more simply flavored - which was quite pleasant. The only change I made was to use masoor dal (the split red lentils) because I had a surplus of them due to disorganized shopping on my part. They do soften and cook quicker, so I cut the soaking time a bit. But they tasted great and had a pretty yellow-orange color that was enhanced by the grated carrots. I will definitely make these again, so thank you!

    • @WeCookVegan
      @WeCookVegan  ปีที่แล้ว +5

Hello PinkMonkeyBird! So happy to see you again, welcome back! I am delighted you like the recipe and yes, you are absolutely right, they are so good with red lentils! I have made it with red split lentils as they are very good indeed! Warmest greetings and my best wishes! 🌞 😊 💖

@@WeCookVegan Thanks! This really was a lovely dish. Much softer and more comforting than my old lentil meatball recipe I’ve used for years. I think it was the gentle spices and the tomato sauce that makes it special. I’ll definitely make this again and again.
I hope your lovely cat is happy and behaving himself. My two dumpster boys (they were rescued as teenagers from a feral colony that lived near a dumpster in a strip mall) got into a huge brawl this morning at 04:30 am, with all kinds of screeching, hissing, spitting, and a massive amount of fur pulling. I keep finding piles of black fur everywhere. Of course, since they are brothers they are currently curled up tightly together in a happy pile of catness on their cat tree.

As a diabetic -- I will make this for sure - however - I will use cauliflower rice instead of the rice you used. Rice is very high in carbohydrates and my glucose level will rise extremely high IF I was to make this as you did -- appears to be very delicious -- so I did subscribe - thank you

Hello George! Thank you so much for watching, subscribing and your comment! You have a very good idea to use cauliflower rice to replace the regular rice! Well done! 👍👏 👏 👏 In this case I suggest to add some flaxseeds as a binder in you'd like to make it vegan. This is absolutely delicious!!! Can be cooked without making balls and used to stuff samosa, kachoree, puff pastries and can eaten with roti/rice as a gravy. A suggestion probably adding thick yogurt i.e. hung curd would not only add flavour but raise the protein value too.

It’s great recipe! I was already making very similar just with less ingredients - soaked green lentils, onion cut in half - blend well, then adding boiled rice not more than 1/3 of lentil amount, salt, pepper. Forming a bit flat balls and frying on both sides till crispy shell appears. Can be served with potato purée and pickles, but I made greek tzatziki sauce and it was so great taste.

As a non- vegetarian/vegan who is trying to move toward healthier stuff, (I honestly wish I had a farm where animals lived happy and we don't 'process' them until they pass-- but then found out that last part was a big no-no...) how do these *really* compare to actual meat? Thanks so much and take good care!

    • @WeCookVegan
      @WeCookVegan  ปีที่แล้ว +2

👋 Hello Julia and welcome! Thank you so much for watching! So pleased you like the recipe! Nutritionally and ethically this dish is better than meat.
You might be surprised to learn the following scientific facts:
✅ Lentil proteins provide not only dietary amino acids but are also a source of bioactive peptides that provide many benefits. Lentil proteins do contain amino acids.
✅ Pound for pound, raw lentils have more protein than steak. While not as protein-dense once cooked, they pack even more iron than meat, in addition to other vitamins and minerals. Fast to cook, easy to store and exalted enough to be buried with the pharaohs of ancient Egypt, these seeds have sustained empires.
✅ For every 500g of ground beef, you can substitute 150g of dried, uncooked lentils; once cooked this will result in 500g of cooked lentils.
✅ Lentils provide more iron than meat
Sending you my best wishes! 🌞 😊 💖

Hello! Thank you for watching! Glad you like the recipe! I used Tomato Purée. Tomato purée is made by lightly cooking tomatoes and then puréeing the softened product into a liquid. Tomato paste, meanwhile, is cooked longer than its puréed counterpart. You can substitute tomato puree for tomato paste. You can make the sauce lighter or thicker up to your taste. 👋 Hello Derek!
Thank you for watching and a very good question!👍
Soaking lentils increase the mineral absorption rate of the body. An enzyme called phytase is activated when you soak the dal for some time. Phytase helps in breaking down phytic acid and helps in binding calcium, iron and zinc. This makes the absorption process much easier.
1.So by soaking the lentils for 3 hours they a kind of half cooked and by this you significantly improve absorption.
      2. Then you fry them for about 5 minutes on each side
3.Then finally you cook them in the sauce the lid for about 20 minutes.
Overall cooking time = 3 hours soaking in water + 10 minutes frying (5 min on each side) + 20 minutes cooking in the sauce. This is plenty to get them fully cooked!
      Thank you ones again!
      Enjoy! 😊 💖

I would strongly advise against this recipe in its current form. All pulses (beans, lentils) naturally contain cyanide that they store in their skins! It is therefore important to wash and soak them properly before cooking them. First you wash them in a much larger bowl of lukewarm water by rubbing your fingers through them to get rid of dirt. After draining them through a sieve or colander, rinse under running water from the tap, you soak them in plenty of cold water for half an hour, drain them again in the same way, and then repeat it for another 4-5 times for about 4 hours. Larger beans and chickpeas should be left overnight in 3x as much water than the pulses. You would be shocked how much dirt will be removed. If the water still smells like almonds, you repeat it as that is the smell of cyanide. If there is any water left before cooking, discard any of the soaking water left and cook in fresh. Adding bicarb soda will soften their skins.

Thank you very much for this recipe. The flavor is wonderful. They fell apart in the frying pan. Maybe a binder?

Hello Jolene! Thank you so much for watching and your feedback! I am so pleased you like the flavour! They should not fall apart if you cook the rice well (preferably use glutinous rice but not essential) and place the mixture to the fridge for at least for 10 minutes (better for longer like 20-40min). If you would like to use quinoa instead of rice for example , add some flaxseed as a binder. Hope it works well next time you make them! Wishing you a nice day! 🌞 😊 💖

Deixar por 3hrs lentilha lavada, mixar bem e descansar. Refogar cebola piadinha, cenoura ralada e alho. Misturar arroz bem cozido no mix de lentilha e depois o refogado. Temperar com sal, coriandolo e ervas a gosto. Descansar na geladeira por 20' e fazer polpetas para fritar. Cozinhar com molho a gosto.

Add drained lentils to a bowl.
      Mash with hand blender.
      Chop 1 onion.
Transfer chopped onion into a lightly oiled frying pan.
      Peel and grate 1 carrot.
Add to the onion and cook about 5 minutes.

      Combine well.
Add 170g | 1 cup cooked rice to the mashed lentils.
Add cooked carrot and garlic mixture.
Season with 1tsp ground coriander, 1tsp Italian herbs, salt to taste.
Mix until combined and transfer to the fridge for 10 minutes.
      Shape into small balls.
Heat a little olive oil in a non stick skillet.
Fry the lentil meatballs for about 5 minutes on each side, or until golden and crispy.
In a mixing jar combine 1tbsp tomato puree, 1tsp sugar (optional), 1tsp flour, a pinch salt and black pepper to taste, 250ml | 1 cup water.

You are doing a great job for the society❤️ I was a hard core non vegetarian till I visited a farm and witnessed the horror of the dairy industry. The cow is inseminated painfully every 6 months so that calf is born. The calves are taken away immediately without a single drop of milk. The male calves are transported to the slaughterhouse to be killed on the very day. This process continues for some years till the cow is completely exhausted and later sold for meat. That’s the milk we consume. I literally had sleepless nights after watching the cows, their udders become so big they can’t even move. And they run to save their babies from going to the slaughterhouse.
Thank you for these recepies so that people can choose compassion in their plate instead of pain.
