    Wow so happy to see Bolivia being appreciated on the show! As a Bolivian I love being able to share and spread my culture to new people, especially the food!
    Just surprised they didn't have trancapecho on the menu!
    Ps. Lucas was eating that saltena like a pro, most people eating it for the first time underestimate it and spill the juice all over themselves hah!

      He was eating it like a champ! Two of the girlfriends that I've had always eat the insides with a spoon and then the dough, just the dough remaining by itself, needless to say it was painful to watch.

      I went to Bolivia and Chile this winter and saltenas were the best damn thing I ate the whole time. I miss you, saltenas!

    I am from Bolivia, and there are a couple of things I would like to clarify. First, the herb that he puts on the salteña it's called "Quirquiña", not "Quilquina" (wich it's not usually consumed with salteñas). Secondly, salteñas are usually consumed whit "Locoto", which is like a chilli pepper, very spicy. Regarding the "Pork Chola", which we usually known as "Chola sandwich" (Because of the ladies that prepare it) is very different from the version presented at Llama Party. The meat is usually dryer, not that seasoned at all, but I would definitely like to try the "Pork Chola" from the video. Besides from that, I think that Alex makes a wonderful job, I am very happy to see that he proudly produces and sells some of the most delicious dishes of my country. I hope he continues to grow and that many people visit the restaurant.

    Honestly this market is preferrable to most of the places above ground at Columbus Circle. The Russian Dumplings place and Bolivian Llama Party are totally worth it.

    I've never tried saltenas but love empanadas, Cornish pasties, calzones, etc. so bring it. Looks delicious. 👍

    Hi! If you are still in NYC, you should definitely try Tibetan food. There are lots of Tibetan restaurants located in Jackson Heights, Queens. My favorite Tibetan restaurant are 'Tibet Kitchen' and 'Little Tibet'. I highly recommend. It's hard to find Tibetan restaurant in other states, so it would be a good idea to try it while you are in NYC.

    The sandwich you had after the salteñas is not supposed to be pulled pork. It has to come from a roasted or baked pork leg or any meaty cut. Carved in thin slices, kind of like deli style.
    And it's not marinated in any sauce. The juicier part of the sandwich comes from what you add to it. There should be thinly cut pieces of chile called 'locoto' (hard to find in the U.S. so the long thin ones you find more often should be ok) (the ones we have are shaped more like bell peppers but spicy/hot). And small pink pickle onions, named 'escabeche.'
    The meat you had in the 'sandwich de chola' looked more like what you would find in a dish named 'charquecan/charkecan.' Only it's not pork but beef. Originally sundried with salt. But if the idea is not attractive, you can use fresh meat. Not sure if it's boiled first and then fried (or only the latter) and then mixed with a puree made out of toasted pods of red chili. Google for specifics if you want...
    Served on top of boiled (skinless) potatoes -NOT russet. Garnished with skinless fava beans -both layers, hard boiled eggs cut in slices or wedges, long fresh (but well washed) strings of onion, chopped tomatoes and finely fresh chopped parsley.
    PS. A story about the origin of salteñas. My grams used to tell me that these were made by two Argentinian ladies who lived in La Paz, who were from a town called Salta, hence "Salteñas," the pastry is named after the nickname these ladies had. The recipe became spread out in the decades after, and they have kept the name since then.
    There are people who say the best ones you can try are made in La Paz. But then I'm biased...

    Just to clarify a few things: I have an authentic salteñeria business here in Bolivia. Those salteñas look very bland: real salteñas are not supposed to be that thick on the inside. It’s supposed to look like an authentic stew and have remarkably noticeable pieces of meat/chicken inside it. That one looks incredibly cold and must not taste very nice. Also, the chola sandwich is filled normally with dry pork, onions, tomatoes, and they generally have a spicy element, like hot sauce or pico de gallo.

      Nothing very cheap. Like I think the full sized chola sandwich was $10. Salteñas a bit cheaper. They had 3 slider sandwiches for $15 and some combo meals that were more affordable. I only had the sliders but need to go back for the rest.

      It's just that kirkin[a tastes very different and is very interesting. I wouldn't say it tastes soapy but it has a unique flavor so I'm not surprised that he took a wild guess here.

      Hey agreed, but check it out, there's usually a comment or two on Lucas' shows about his slightly withering approach. That's why I said I don't know why he/Eater bothers (to report on stuff he's clearly, or seems to be, non-plussed about). Imo, if they show up for a shoot and the food kind of sucks, they ought to just say so.
