      You need to make a shirt that says. Spray Butter. It had to been the butter that gave it this color!

    Thank you SO MUCH!! I’m 42 and I feel like a moron not knowing the simple joy of barbecue or smoking. Up until now, I’ve gotten by with a pork butt on the old barrel smoker and a hibachi for almost everything else. My joy is the kitchen, but I want to learn more about Southern Q and smoke.

      If you're talkin more smoke when all you have is white smoke then you're just getting more bad smoke on your meat... A fire with white smoke isn't hot enough to create blue smoke that's where you really get your flavor .

    IMO, preparation is my favorite part of BBQn. No need to make a grocery store because you forgot something if you plan well. Love your channel bro!!     Dang Brother let me tell you. I cooked 22 Racks this weekend and I thought I was done with ribs for a while. After watching this video you got me want to taste those ribs right there!     So glad I found this video. Got a pellet grill for Father's Day and have been looking for videos by someone knowledgeable and easy to understand, and the algorithm was only recommending me the same recipe by a hundred cooks who don't have the knowledge or experience to be teaching.     Bought my pellett not too long ago. As always I do my research after research . Bought in to the 3 2 1 method and didn't work. wasted so much meat and $$. And then I discovered the 2 2 1 method. Wow! Great! Only to find out again, time , money meat wasted . How come the experts and popular peeps can do it at home and I cant? I knew i was overcoooking my food. Dry , burnt butter , too salty. Argh.
    I knew less was the key but Dawg! You brought it home for me. Practical. Your simple rub as well! My whole family was satisfied! From young to old! You gave me a good foundation to only do these baby backs better by tweaking little here little there. My hats off to you good Sir! DAWG! Keep them coming Dawg! Stay safe.       Bro THIS IS what it's all about!!! I think a lot of people watching videos assume that the information they they get will be the "be all" to get them over the top. When you approach it as you did in the fact that it is rather a good foundation to allow your own creative juices to come out to develop your own style, you afford yourself the best results possible at that time. Once you continue to develop your own style you hone in on perfect results for YOU... There are no rules to backyard BBQ so definitely have fun with the process and figure out what works for YOU!!!     I've watched your brisket and rib How-To videos, and you do a fantastic job explaining the process on both. If anyone cant' do a brisket or ribs after watching you, they didn't pay attention.     On a pellet grill, I dont wrap. I hit it with straight smoke then some low n slow.6 - 7 hours you can acheive some tender bite pull off the bone ribs. Not fall off the bone, bite off the bone again. Only time I really wrap unless im impatient is when I do. But then again that mode is always hot n fast. Great cook brotha, I love me some ribs. Baby backs are my favorite to cue up.

    I've been watching a LOT of BBQ video's on TH-cam. I really enjoyed the video and was wondering about the "total cook time". I usually make the fall off the bone ribs (wife's favorite) with roughly a 5-6 hour cook at 225 on the Pit Boss. What was your total cook time? These looked great!

    I've got a pit boss classic arriving tomorrow.....I've never been good at grilling because I need exact time, temp and direction. Soaking up as much info as I can because I love a nice bbq (made by someone else). Have you used a pit boss?, flaws, positives......corrective cooking times/temps that you know of?

      So I've only used a Pit Boss once and it wasn't a good experience. It wasn't my unit and I can't remember the model. Basically we did a bug cook for a festival and put a couple of briskets on it to cook over night. The cooker apparently cut off in the middle of the night and it had a grease fire twice. Finally just pulled those off of that grill and put them on the brick pits we were running with the other meats. Experiment over. With that said, I have MANY friends that LOVE their pit boss cookers so I'm hoping it was a one off experience. One piece of advice for learning BBQ is to not get hung up on temps and times. That will lead you to inconsistent BBQ. All briskets are different and will cook a little differently. If you understand the processes you are doing in the different phases of your cooks then you will develop feel and make a much better product. Just be patient and enjoy the process of figuring out what works for YOU...

    I’m new to the smoker thing, and man, these ribs are perfect for me to start with. How long was the total cook time? Was the grill temp always at 275? Thanks for making this vid. Will be checking out many more from you. Sub’d 🇨🇦👍🏼.

    I have a Yoder YS640s, got it as a graduation present from college. I like using a smoke tube to add more smoke flavor to the meat.

    Great video but you did not mention how long you cooked the Ribs wrapped and unwrapped. Two very important details to follow or the whole rack can be ruined. Going by color, not so easy for beginners.

      He does say 45 mins from the 2nd to 3rd checkpoint. Then he goes 15 mins more wrapped then 15 open foil.

    Haven't fired up the pellet smoker for over a year, but gonna throw some spares on it this weekend. Like to have Yoder, but those suckers aint cheap.
    Soon as you said HEB, I knew what state you're in. When I want a little sweet heat on em, the HEB TX Sweet Heat is pretty dang good, I just add some extra black pepper to it. I like the way you keep your rubs simple, not 12 or so different spices. Used to do all the different spices over 20 years ago, found that keeping a rub of SPG is really the way to go, let the meat and smoke shine thru, not a concoction of this and that. Your channel is very informative for all the beginners, and even to some of us seasoned veterans. Have a good one.

    I’ve been using an electric smoker for years and just retired it and switched to a pellet smoker. Thanks for all the practical tips. I already used your Amazon store link for the smoke tube which is on sale right now and will pick-up some other items to as I need them. I’ve been binge watching your videos while under the weather temporarily and learning something new with each one. Making tallow is definitely one video I’d love to see in the future.

    Absolutely the BEST cooking video, for beginners, of ANY KIND I have ever seen! Not that cooking ribs is complicated (I've never done it however) his friendly, calm delivery makes it EASY to follow. I like the 'Check Points'. You EASILY can't go wrong.
