    Grande Massimo. Trasmetti amore e passione per la pizza. Impasto e soprattutto topping molto gustoso.
    L'unica cosa è che sembra che ti sia rimasto un eccesso di farina sul cornicione e che si sia bruciata in fase di cottura. Hai usato farina di riso durante la stesura?

      spero che il mitico Massimo ti risponda. Sarà contento di leggere le tue belle parole! Intanto ci provo io che ho realizzato il video e ti ringrazio innanzitutto di aver scritto. Ovviamente non ti riferisci al cornicione della pizza in foto di miniatura perchè quella era con un lato di semi di sesamo come dice Massimo nel video. Dunque non so, io di solito vedo cornicione anche molto più cotti di questi, comunque interessante osservazione. Posso testimoniare in ogni caso che la sua pizza è davvero ottima, un caro saluto

I searched but it is not easy to find it, however on the internet and therefore also on amazon here in Italy you can find something by putting the name "matra" or "madia", this is the name of this fascinating Neapolitan object.     Bellissime pizze maestro ma ti posso chiedere se hai messo solo 2 gr di lievito di birra fresco per chilo di farina nel prefermento che poi se e 100% biga non ci va altro lievito come starter grazie una buona serata Maestro
