I've been going to this channel every time I need to learn (or remember lol) how to do something crochet wise. You never cover the camera with your hands, you pause to let us see how many strands there are and you explain every single step so clearly in such a short video. Extremely to the point. So, I know how to do these stitches, but what exactly do they accomplish that a SC wouldnt? I usually just crochet from a pattern, and trust the pattern, but I'm curious what exactly this (and double crochet, triple crochet, etc) does for shaping?

Ok, so I'm right-handed, but I hold the hook in my left hand. Do right-handed people usually hold the hook in their right hand? Every crotche tutorial I've ever watched the hook is always in their right hand.
