Light and Fluffy Angel Biscuits!

  • I got to use some of my prized bear lard(you can use shortening) to make these wonderful biscuits that use yeast for a mile-high rise and an incredible texture.

    My only question is is that why use baking soda/buttermilk and then wait a day or so? They have their reaction faster and don’t like to sit. Science wise, it doesn’t make sense to me,so I’m just curious.

    You don't kneed biscuit dough when you roll it out for the first time. After you cut your first set of biscuits, then you will have to kneed your dough a little, but not excessively!

      I used a 2-inch cutter in the video, but any size should work. You could even cut them into squares with a knife. Thanks for the question!

    I don’t have shortening, but I have a jar of duck fat. Do you think that would work?
