A barista is a skill that takes a lot of practice but when someone is good at it, they are fun to watch do there thing because they make it look incredibly easy to do. Also Brazilian peaberry coffee is delicious, very good choice of beans! love from Sweden

I use Hario white paper filters and spring water. I brewed at 95 degrees Celsius. I grind with a Comandante hand grinder at 22 clicks. I used a 1:16 ratio, using 2000 ml of water and 12.5 grams of coffee. However, my coffee turned out quite sour. How do you interpret this situation? What do you recommend?"
I’m assuming it’s under extracted, try grinding coffee a bit finer next time. What I prefer doing after getting a new coffee beans, I usually grind it on midium-fine setting and use 1:15 ratio (15 grams of coffee to 225 grams of water) bloom at 50grams wait 30 seconds and pour the remaining 175 grams and give it a stir and it should brew between 3 - 3:30 minutes. That is my go to recipe and works great every time. But I would say it all boils down to the grind setting, play around with grid size and see what works for you or let the coffee rest for some more time, sometimes some coffee requires more rest time than other. Try it out and let me know how it goes my friend.
I would say work from the ground up I’m doing a traineeship with the place I’m working at I’ve been doing cold drinks and food I don’t do hot drinks yet but I will soon

It’s something to with my habit, I don’t think I have ocd but I like to keep my work station very organised, plus I prefer things to be at allocated places at all times.
