      @@KingSchratz you gotta go to a Filipino party and eat some fresh hand rolled and fried lumping or some lechon.
      One of my childhood favorites is a pan de sal bread roll from a Filipino bakery cut in half toasted with butter and stuff it with pancit for a little sandwich

      Just my opinion, Max's is overrated and expensive. Some local food shops and fast food stores taste way better and easier on the pocket, sorry..

    Bru! You're the first black dude I've seen on TH-cam that knows filipino food the way it should be tasted. From the rice noodles to the flan. Yes, the flan is firmer because of the amount of yolks added plus the combo of condensed and evaporated milk used. If you like bicol express (pork belly) you got to try pork belly "sisig" and pair it off with a cold beer or rice. Your mouth will explode with the rich texture and taste.

    You're right, Bicol Express is meant to be spicy like the ones in Bicol. Max's just adjust their spicy level to low or average so that their customers keep ordering it. Maybe you can request for it to be extra spicy. :D Awesome content as always man! Keep it up!

      That's why the chilies in the dish weren't chopped, so the customer can choose to cut/crush it and adjust the spice level. 🙂Normally those would be finely-chopped and added while the whole thing is simmering in the pot.

    When my mom used to make pancit she would take the shrimp shells and boil them. She would throw out the shells and use the flavored water to boil the noodles for the pancit. FLAVOR.

    My late mom is from the Bicol region and this province is known for spicy, coconut milk-based dishes. What you had is the mild version of Bicol Express. The authentic version will surprise you and you gotta have a glass of milk ready. The reason it's called Bicol Express is because you'd run as fast as the Bicol Express bus looking for water. About 50% of the dish should be bird's eye chili.

    Max's was the number 1 restaurant in the Philippines since 1945 till now. It is one of those authentic Filipino dish. The flan is made of evaporated and condense and egg yolks and vanilla extract

    The Leche Flan has both condensed and evaporated. Yes, has more yolks. And caramelized sugar. And it is actually also pushed through a strainer or sieve to make it smoother. We do it three times in my house. Cooking 101 when your Nana is Filipino. Every one of me and my siblings know how to cook.

    Yes, Bicol express is supposed to be really spicy goodness…the filipino flan is thicker, milkier, and more eggs than the Mexican flan. Your tasted buds are on point! Amazing.

      Not all Filipinos are from Bicol or likes spicy food, pretty understandable Max re adjust the heat to make it enjoyable for people with low spice tolerance

    You should try the Filipino dish chicharon bulakak, especially if you like crispy pork and/or pork rinds! It’s delicious with vinegar (and for a lot of people, beer)

    You should try their crispy pata (fried ham hock) too. It’s one of their popular dish.And it’s usually served during holidays or special occasions in the Philippines.

    Recipe of leche flan.1 can condenced milk 1 can evaporated milk eggyolk vanilla extract and foil steamed for 40mins low heat it's delicious dezzert with caramelized white sugar.

    Now I’m craving pancit bihon and Bicol express 😭! Asked my mom to make Shanghai lumpia for Christmas and she made extra for me to keep in the freezer and fry when I want 🤩. Leche flan was my favvvvv dessert at fam parties!

    The lumpia sauce is sweet chili sauce. It's a Thai sweet chili sauce. The chicken you should try is Inasal, it's really good. The bicol express has the peppers so if you want to cut it up and mix it in to make it more spicier.

    There is a very good sauce you can make for that Max's fried chicken. Mix The (Jufran) Banana Catsup with (Lea & Perrins) Worcestershire sauce then add some of that signature Max's chili sauce and blend those three together and you got yourself a semi viscous concoction that goes well with the spring chicken.

    The flan or pudding like we call looks more like the “Brazilian version “ just by the looks, firmer, creamier, made with not only milk but condensed milk so it’s tastier and don’t have this after taste :D

      Flan in the Philippines are firmer, rich and creamier; its not wobbly, jiggly and light flavored like other flans

    The chilli in the top of bicol express is not just for presentation..you can used it or chop it into pieces and mix it to get more spicyness to the bicol express..some people who eat bicol express dont want too spicy that's why they did not break that chillis in the top...

    The fries of Max's is a sweet potato, you dont dip in in a ketchup, most of us dip it in a butter with sugar or mayo with garlic. 😊 Regarding to the sauce or ketchup of the chicken, we mix worcestershire and the ketchup for the chicken. So many secret ways to eat those.

    Max's is an old Filipino restaurant. The second dip is sweet and sour sauce-the perfect dip for lumpiang shanghai. BTW, you're wearing my fave TV show! The Mandalorian!

    Max's Fried Chickens are boiled first with secret spices and then fried to perfection... Here in Philippines I love to mix their banana ketchup, hot sauce and Worcestershire sauce together and that's bangin

    My wife is filipina and I lived in the Philippines for 8 years the pancit seams legit except calamansi instead of lemon also lumpia is longer and thiner...and bicol express is probably one of the most spicy dishes but the pork is not fried...but max did say it was their version but it's not authentic

      Americans use lemons because they don't have calamansi obviously. We Filipinos are lucky because we have both calamansi and lemons.

    Bicol express is a train line going to Bicol region and the dish was name after the line. The story goes that its was created in Blumentritt because the bicolano's complain about the laing(a bicol region dish) since Bicolanos are known to love hot and spicy food plus they love coconut milk on theyre dish thou the dish was born.

    I am getting hungry everytime I watch you eat 😁, as far as I know the way of frying Max's Chicken is by bathing the chicken with boiling oil, its marinated and boiled in water, cooled then bathed in very hot oil

    I’m guessing the spiciness in the Bicol Express has been dialled waaaay back for a more general American appeal. If you ever find yourself in the Philippines, you should try the food in Bicol. Some of the best food in the country and I’m not even from there. It’s gloooorious

    I have never tasted max's with a banana ketchup before. you should try oyster sauce on the chicken. bicol express can also be just chili and the sauce, the pork is just so good if you add it there. the filipino flan uses no egg whites.

    I highly suggest to try lumpia with coconut vinegar with lots of onions, chillies and garlic . I'll take that everyday

    Try going to a mom and pop filipino store and get their bicol express. The orig version actually have a soupy base on it and its using a stew type of pork belly cooking. That one in maxes is their own take on it, idk if it will be better for u but imo the orig version is better.

    The chicken was marinated in fish sauce, pepper, garlic and msg. Then they steam the chicken before frying.

    You need to eat it with the special sauce - mix well catsup, Lea & Perrins worcestershire sauce & hot sauce (the amount depends on your taste)

    There is red chili in bicol express.. you can cut it into pieces and mix it in bicol express.. that's the purpose of the chili that is put in the bottom...its spicy

    Some body builders eat that pancit bihon a lot. The noodles has a lot of protein. So they say. I am not sure which variety but it is made from beans.
    I think they toned down the bicol express a lot. In Bicol it would be slathered with a lot of green and red bird's eye chilies. They consider chilies there as vegetables not spices.

      Max caters to the general public as much as possible, serving "legit recipe" bicol express will alienate a lot people that are not from Bicol or people simply has low spice tolerance

    that's what the chilies are for ... you could personalize how spicy you want it to be in every bite... Add a little piece or a huge piece of chili on your bite or crush the chilies and mix it...

    as far as i know, Max's chicken is steamed then fried... that explains why it's fall off the bone, tender and crispy skin at the same time... and usually the dipping sauce is banana ketchup with worcestershire sauce.🙂

    Finally you're back on Filipino food. I'm glad. oh no! That's such a tiny sad serving of garlic rice. Oh you do really really love lumpiang shanghai. Yes you're right. Soy sauce is one ingredient in pancit bihon. Yes every viand has to be eaten with rice. You can eat lumpiang shanghai with rice too. I'm surprised with the bicol express. The real and authentic version isn't fried. It's to be simmered to a boil until the sauce thickens. Bicol express is usually regular spicy and shrimp paste isn't necessary. There's a pork viand that uses shrimp paste
    It's called *Binagoongan* but no coconut milk. But if you want it spicier, just crush those bird's eye chilis. But I warn you, once you crush them their spiciness is no joke.

    Actually, Max's Restaurant was initially catered to the Americans. Soldiers and other servicemen was catered by the founder.
