I've seen someone add a dollop of shrimp paste to a bite and complained that the whole thing wasn't good. I eat sinigang the same way you did!

When you ate the sinigang with rice I was like "yeah! finally someone who understands!". Thank you for another great video man. Always for some Filipinos we like to have a dipping sauce for our sinigang as well, me and my family use a fishsauce + bird's eye chili and dip the pork and some of the veggies from the sinigang

We use the Instant Pot electronic pressure cooker for cooking the oxtail for kare kare. It makes it so tender, and gives us a silky, deep broth to use with the stew. Plus it cuts the cooking time down from about three hours to just one. Some use the IP to finish it also, but we have found it is just as easy to finish on a separate pot on the stove top. The only issue we have with it is how much peanut butter to put in, Mrs. Rick likes a bit more than I do. Caldereta is very good also, but we like it better with goat. Beef is more than acceptable, though. Mrs. Rick likes salmon belly/heads best in her sinigang, but I like pork ribs better. As for breakfast, any day that starts out with garlic fried rice on the plate is going to be a good day. 😁😁 When I married a young, 20 year old Filipina back in 1974 I didn't quite realize the lifelong culinary adventure I was setting sail on. Our kids are now teaching their kids how to enjoy and cook the many foods their momma taught them while growing up. Another generation who now understand and appreciate the food of the Philippine Islands.

Yes, it's a shrimp paste and it's called bagoong (ba-go-ong). There's not really a right way to eat it, just mix it in however you want. Glad you liked it!

When you put the shrimp paste on top of the ox tale.. I was like "YES! That's how you do it!" a little bit of shrimp paste! It picks up the kare kare because it has a mild flavor.
Tip for eating Filipino food. Grab a big plate and arrange different kinds of viands and the rice then you build those flavors in your mouth! And leave some sinigang broth at the side. Take a sip of it to reset those flavors.
Omg you really got the best Filipino dishes right here. My family uses ox tail for caldareta. We alternate with meat with our sinigang. Sometimes we use salmon, sometimes chicken, pork, or shrimp. I recommend trying beef nilaga, dinuguan and pancit palabok!

Don't worry, eating rice in soup is also how we do the sinigang. That one you had looks like a cross between a sinigang and nilaga because we don't usually put cabbage in our sinigang. It's usually radishes, taro some string beans, eggplant and okra and this vegetable called kangkong. So you eating the rice drenched in the soup is not weird at all for us because we also do that here too haha

Siningang and rice combination is the best! I think water spinach isn't available there, but when it's done in the Philippines, it's super sour. And ys, it's tamarind. Typically, it has pork, water spinach, onions, tomatoes, okra, gabi and radish) and it's not supposed to be sweet. Maybe it's the cabbage that gave a little sweet taste to it.
The shrimp paste is a must have on KareKare. You're doing it right!! I'm not sure if you tried chicharon bulaklak and dip it in vinegar with chilis. That's my all time fav.
I'm Filipino. I'm a bit picky when it comes to shrimp paste it has to be Barrio Fiesta brand. 😂 I looked at Mama Fina's menu you should try bulalo soup, mongo soup with white rice. Beef steak (bistek) is also good. Turon and leche flan for dessert 😋

They usually seperate the shrimp paste because some individual have allergies to seafood but you can cook it with the kare kare if you like the flavor. Hihi

The shrimp paste is a must have on KareKare. You're doing it right!! I'm not sure if you tried chicharon bulaklak and dip it in vinegar with chilis. That's my all time fav.

Originally sinigang has no sugar. It's the cabbage makes it's sweet a little bit.

I'm Filipino. I'm a bit picky when it comes to shrimp paste it has to be Barrio Fiesta brand. 😂 I looked at Mama Fina's menu you should try bulalo soup, mongo soup with white rice. Beef steak (bistek) is also good. Turon and leche flan for dessert 😋
Barrio Fiesta is meh tbh, too processed. Homemade is the best.

I'm quite a big dude (6 ft and 220lbs) and I eat a lot. But when he finished the whole Kare Kare in 5mins with rice, I'm a small eater. Love how he ate all of those food which is good for 10 people! Dang!
They usually seperate the shrimp paste because some individual have allergies to seafood but you can cook it with the kare kare if you like the flavor. Hihi

The sauce for Kare Kare is a shrimp paste, you git it right. you put a bit of it on top the kare kare and rice when you spoon it :)
