I made this Biryani in instant pot on rice setting sealed, it took only 16 minutes and it was the most amazing Biriyani. Amazing recipe Kunal, it was better than the best ones you get in Delhi, Hyderabad or Lucknow. Took me 30 minutes from start to finish

I made this Biryani today, in a non stick pan and I was a little sceptical because I had never prepared with raw meat and raw rice. But it was the best Biryani that we had today. Thank you Kunal for this easy, quick and tasty recipe.
I am Indian from Hyderabad. The recipe is exact, biryani is the easiest recipe and they are slightly different versions like using mint and onions fried in ghee and they are garnished on top and some people like to marinate for hours and moreover while boiling water I like to add biryani / bay leaves, pepper, cumin,cinnamon stick , green cardamom, cloves, stone flower,mace, star anise , caraway seeds,long pepper and boil all spices in water for 15-20 minutes and then add rice. later strain the spices along with rice and remove spices from it so, that it gives smooth texture to your palate while eating food or easy way to tie all spices in potli (like small cloth bag) and remove while straining ( Hyderabadi food is lot spicer compared to most parts of the Indian city- you just can avoid spices or adjust as per your wish as Kunal Sir mentioned in the recipe :) ) all depends on your time and adjusted accordingly to your taste buds Mint and onions fried in ghee. It tastes better if it is frozen after frying in ghee and used for garnishing .Moreover, it is not compulsion it all depends on different taste buds, and it was shown very little quantity and it takes very less time to dum.If it is cooked in other than earthenware it might take around 30-40 minutes as we don't use direct heat .Adding more to it earthenware tastes even more better if it is cooked on charcoal grill or heat produced from wooden chips ( Traditional way of cooking but most of the people prefer even today because of its authenticity like me) If flour/aata is not the right option for you ! as you could not able to scrape it well or time taking process then opt for an easy way to do. It is to cover with foil paper and keep a heavy weight on the pan lid like mortar and pestle or bowl filled with water and also if you don’t have earthenware just cook it nonstick kadai and make sure not to pass direct heat to kadai just keep Fry Pan or Skillet which basically has a flat surface. which is slightly bigger than kadai .so, that it better fits the size of the pan which is underneath and yes chef Kunal mint is the main flavor for biryani 👍🏻 I hope this message helps you all to get a better insight on dum biryanis. 😊 I love your recipes Kunal Sir 😊Thanks for taking the time and for uploading your great recipes.

Chef, I did chicken biryani. Marinations done with curd n salt first . Then the other ingredients like garlic ginger paste, onions slice, ginger garlic green chili coriander and mint paste, garam masala, turmeric, red chili powdered I gave tadaka and add to marinate and remaining same procedure. This only done to reduce the Kaccha smell of Ginger Garlic and chili , turmeric powder. It’s gave best results.
I also feel this is the right way But I contradict with cooking rice We should cook almost 70% then rest of the procedure is same But Kunal Kapoor has presented the right way Iam fed up with all non sense biryani recipes named Hyderabadi Biryani
We Bengali put aloo in biryani nd we made it with mustard oil...we cook chicken separately and then put it in pot with half cooked rice in 3 layer den put jafraan nd desi ghee den seal it for dum...it's mind-blowing Ummah,.......😀😋

Looks amazing! Question- is 12 minutes (plus 7-8) minutes enough to cook the chicken completely? What I love is that you’ve taken the guess work out of how long to cook the chawal for. In all other recipes I’ve watch it used to drive me mad… “cook the rice till it is 70% done or 90% done”

I have been making dum Biryani slightly differently, with a 4 hour marination process. Also, in my layers, the meat is the first layer (bottom of the pan, after slightly greasing the pan). Tbis is followed by the 50% cooked rice, then mint, then cooked rice, saffron, kewra water, rose water, and tgen the final layer of rice with fried onions, mint and saboot garam masalas that were boiled with the rice. I had seen that in Hyderabad and has been working well. That said, it is a long process and this one might cut down my cooking time by a good 3 hrs.
