Well actually the "Viennese classic version" of Kaiserschmarren is made in the oven, and I can tell alone by the looks that one wasn´t made in the oven, but in the pan on the stove = and therefore that´s not "the classic Viennese way" but the "mountain hut way". There is nothing wrong about that, but it´s not "the most classic Viennese version" but actually the "rural version" but served with the Viennese classic side = stewed plums. Actually there is no place where "the classic - Viennese - Kaiserschmarren" is offered for sales anyway, because an oven-made Kaiserschmarren can´t be produced and then sold in masses simply because on the stove you can prepare the batter in several pans simultaneously quite quickly in few minutes which you can´t with an oven due to the space limit of an oven and it takes also a little bit longer in behalf of the cooking time and because a Kaiserschmarren has to be served hot and fresh on spot and can´t be pre-prepared and then heated up, it can´t be done efficiently for high number sales in a restaurant setting or booth/street sale setting but only in a home made dinner setting..I personally just do it for dinner guests, but for me alone I do it rural in the pan on the stove because it´s less effort. The difference though, by the way is then solely just the texture...when made "the classic Viennese way" in the oven in a casserole the batter rises way way way more than when prepared in the pan on the stove so the Kaiserschmarren´s texture becomes then as fluffy and airy and light as like as a Soufflee, well it is then an actual Soufflee but just cutted into mouth pieces
