Nice to see people who can actually work a pan section- high heat, flame. Not simmering it away with a pissy little flame, playing around with it every 3 seconds like I often see these days.
do you run into issues with the soundtracks in your videos? I'm a big supporter of your channel as you show what its actually like on the front line of kitchen work - controlled chaos. I'd hate that you might get dinged with copyright strikes, etc.
That’s what I do a lot of cuts in my videos to avoid copyright. TH-cam checks for copyright before you post a video :) so I’m all good! But thank you for asking

Jack, are there zero regulations about gloves or washing hands in that restaurant? Yeah, you're fast and skilled at pumping them dishes out, but bro what about cross contamination, for reals?
Excuse me? I wash my hands more then 100 times everyday, sanitise my knives and sections down between every job, wash my hands after touching proteins and seafood! Have clean hands while garnishing dishes! Yes, we have gloves and we wear them for certain jobs, but no you do not have to were gloves during your whole shift
Don't waste your time with this "glove black lovers" My sister in law is a health department inspector and true, there's no need to mask your hands in the US as long you properly wash your hands. Use gloves when prepping raw food (chicken, sea food, shells.... Etc) As long you wash your hands routinely and replace your towels as well, you will pass any inspection in the US. Australia must have different health rules. But ignore this people that ignore what the gloves are for... I've seen vids from bakery kitchens who waste money in gloves to move cookies from the oven to the store front... Waste of profits. I am a sous cheff, we don't wear gloves at all... What we do is constantly keeps our hands washed while we can, specially during rush hours. Health inspectors are OK with that. Keep your stations clean, and temperatures checked and you will never have a problem. GLOVES WON'T SOLEVE THIS INSPECTION ISSUES...

Occasionally.. we change a few items every now and then, and do daily specials, the main menu stays pretty much the same because it works so well

That’s the Knife my first head chef got me in my apprenticeship, he passed away so I am attached to that knife
