The gentleman had just too much ego from the start. Using flat bottom, butter 🤦🏻♂️, over complicating the rice, and most important talks too much in the kitchen. You never talk back to your chef. Just accept defeat and try again. Be a sore loser.

It's not just leftover rice. It's leftover rice left in the fridge.
You can use fresh rice as well, but you gotta make sure to let it rest in the fridge for some time before doing so.
Fresh rice is hard to seperate, and trying to do so you'll end up mushing pieces together. A good fried rice is where each individual grain of rice is seperated from each other.
As long as the rice isn’t too wet, you can use warm fresh rice. Jasmine rice is a good texture for this application. The chef from mission chinese food did this for his fried rice.
@@Thatkimm I'm in Indonesia. It's a land of master fried rice. My favorite food also.
We not just use ordinary lefted over rice. We use special rise with high level of amylose (usually above 25%) such as IR 42 or Inpari, much higher than ordinary jasmine rice. So the grain separate more, less and less sticky. Also it have lesser gluten, good for persan hwo have intolerant.
Also the flavor is richer because we use a lot more complex seasoning.
My favorite fried rice is East Java type. Simple meal just Can get over it.
I'm from the Philippines, we don't care if rice is being fridge or newly cooked.. we just use,.. used coconut oil from frying dried fish, it becomes flavorful at its best but it smells like shit..

Or steam it, or adjust water. Or fold in eggs or a fat to the rice while hot. Makes the rice grains separate during cooking when done correctly.

Its recommended but if you don't have any and you don't have the time to wait 24 hours for rice to become a day old, you can use fresh rice spread out on a baking tray to cool and dehydrate on the freezer for like a couple minutes, that way it would replicate the process of making day old rice without the hassle of waiting for an entire day
Fun fact: the guy who lose is a real well known chef. People had been joking on him about this fired rice scene in the first week of release of this movie.

Considering that he is an arrogant person, even if he had managed to pass the preliminary tests that chef Paul had handed him with, Patt would still be kicked out someday for letting his ego be the better of him. Chef Paul is also known for presenting food in a unusual manner and using exotic ingredients (hornbills) which to Aoy was already unethical, let alone Patt himself. Also, given that Chef Paul would 'abuse' his members and throw fits over trivial matters and small faults, Patt would've been targeted for his arrogance and as we know it, arrogance can lead to failures, something that chef Paul detests.

it's not simplicity but he missed the basics. his (sous chef boy) fried rice texture is wrong. wet and oily. i don't even want to eat that. the moment he take fresh warm rice straight from rice cooker, he lost the battle. because you should use one day old cold rice. that's the bare minimum of knowledge you should know as a chef.

To me, he was referring more to the head chef's decision of choosing fried rice as the menu to test the newcomers. The simpler the fried rice, the better. Fried rice is a menu that cant really be enhanced with fancy stuffs like shrimps as shown in the clip
The real scene on what actually happens on Asian food tasting / trial when applying for a job. Doesn't matter what school or previous environment you came from, what matters is the knowledge and experience you have learned. All that fancy culinary teaching doesnt always qualify when your employer asks for something you think is "simple". Sometimes, the simple dishes tend to be harder than complicated dishes. I remember when I tried applying for line cook in a restaurant in a 5 star hotel. I was going against an ojt who came from ENDERUN, one of the prominent colleges for the elite in the Philippines. I remember him making a complicated / altered version of Tom Yum without Kaffir Lime leaves and Lemongrass, before our employer let him finish, He was sent home in an instant without question. Our employer was a Thai national and was deeply offended at his performance.
The simpler the dish, the less there's to hide behind, and thus, the more the genuine skill of the cook is exposed. Even something as simple as a grilled cheese can be made poorly or masterfully, it's all about procedure and technique.
There are three main ingredients for TOM YUM. lime leaves, Lemongrass and galangal. Dude just ignore 2 of them LOL

This scene is neither too dramatic or shocking, it's just so honest. The first rule of fried rice is that it needs to be dry. That "wet" fried rice of the guy did not need to be tasted

They make the trained chef to be a complete idiot so the woman can shine, which of course makes the the woman a complete imbecile who can only succeed because she's favored by a stupid chef and is competing against a stupider chef. @@Mirikawa this movie is from Thailand. There's no Chinese here. Also, fried rice itself is a traditional asian food, from Japan to SEA, not specifically Chinese. But the method always be the same since its invention. Asian cooking using stir fry method and high heat, vastly different from Western food.
The point in this scene isn't for saying Asian food is better than Western food. But to give a lesson and undertanding that glorifying western method of fine dining can't be used for all foods. Because food in each region/country is tied to the culture and natural resources around it.
For example using butter to make steak, will always taste good. But using it to make fried rice will, and always be, epic fail...

Even Gordon Ramsay gets owed by many chefs around the world and he is a world-class chef. He has shown to fail to cook Pad Thai, Dim Sum and Kebab properly. Therefore, the guy must know that he might graduate from pretgious school that doesn't mean he can win against some street food vendors who never go to any school but has many years of experience and skills
Truth! Even Bobby Flay, who seems to be able to cook most cuisines at a top level, admits there are certain things he hasn't mastered. Pad Thai was one of those dishes. (He lost doing a pad Thia challenge on his show Throwdown against a Thai chef.)

This scene reminds me of a dish I once had of Chinese noodles. Just noodles. Nothing else. One of the greatest things I have ever eaten.
Simple food are harder. You can't mask anything as theres only 3 thing that has to be correctly managed to get it right. No sauce no other filler its just those 3 things oil, egg and rice very basic but a very delicate in how the ratio and technique processing them is done. Another similar thing is hainan rice, chicken rice salt and water for the same reason

We all know that in other to make a proper stir fry, you use a wok and if you don't have access, you use a non stick pan so the rice won't not only stick to the pan but it won't burn. So she definitely won using the right methods.

as a business owner who works in food and beverage industry, i know from first glance what exactly his mistake is.
• his frying pan is too small. heat should be evenly distributed and you achieve that with big wok and mixing motion like Aoy did.
• he used fresh warm rice. the correct ingredients should be cold rice that is already cooked in the morning and you use it for fried rice in the evening. or the chef can just put that in the fridge (just like what they did)
• the texture is wrong. it's wet and soggy. too much oil or butter. refer to point number two above. if you use correct ingredients, your fried rice should be dry not wet, soggy, or oily.

I haven't watched the movie, but I know the head chef will be my favorite character. Neither good nor evil, no discrimination, no-nonsense. He just wants the job done correctly, and anyone who can do that is qualified
