Mmmm, cucumber sandwiches, tomato sandwiches, peanut butter and bacon sandwiches, peanut butter and pickle sandwiches, and peanut butter, pickle and liverwurst sandwiches--or any combination of the above--all with mayo and/or cream cheese, of course. This sure stirred up memories. I once had a green olive and walnut sandwich. I found a recipe that uses pecans, and luckily, I have pecan trees, so I will be making one of these.Tiny squeeze of lemon or lime in any of these mixtures will send it over the top. Or...rice vinegar. Dang, now I'm hungry for fancy little sandwiches.
I've never made these but I've had the pleasure of eating them. The way that I always saw them made was cutting the crust off first and then making a Criss cross-cut in the piece of bread so you had four triangles. But then you use two triangles for each finger sandwich with the cucumber mix in the middle. That's not the important part of course the cucumber is, and I haven't had this for years. I think I'm going to use your recipe! I even remember years ago that they sold little loaves of bread with no crust that came in colors, pink blue yellow. As I recall it was made specifically for making finger sandwiches.
My own dear Momma sliced the crusts off the bread and then cut the crustless bread diagonally into triangles, sometimes she would toast the bread and then add the cucumber sandwich topping. Nice memories.
Boy does this ever take me back. My grandmother made this recipe except hers called for some snipped dill to taste and Meyer lemon juice. It tastes so much like summer.

I have that chopper and I’m in love with it. I use the small one for dicing up onions for chicken salad or tuna salad. Not everyone likes a big ole chunk of onion. I definitely do… love my onions. My mom made them for circle meetings( womens church group), and showers etc. was considered then in my memory as “ ladies finger food”. But they were good. She used white bread, crusts removed and made into squares or rectangles, smallish in size.
My momma always makes them with Pepperidge Farm very thin white bread with no crusts, and she cuts them into rectangles, too! She calls them finger food, or lady sandwiches.
Oh yes I've many cucumber sandwiches in my life. I haven't had one in years though due to health issues. But I know my family will love this recipe. Can't go wrong with cream cheese!
I love this recipe. When my kids were small we use to have tea parties and they loved it. I made the little "Baby Shower" foods (cucumber sandwich's and pineapple spread sandwich's) and brought out the best tea cups. Sweet sweet memories. Were a homeschooling family so this was part of our Home Economic days. A great video idea would be on typical Baby Shower, or Tea Party foods in the South.

Tammy, I’m 76 y/o and my mama made this and I was told it originated in Kentucky and was used for Derby appetizers and served on small patty rye bread. The cucumber is grated and the liquid is tightly drained off. The onion is scooped with the curved part of a spoon and that liquid and pulp is mixed together with the cream cheese. Texture can be adjusted with Mayo if desired. Salt but no pepper is added. It’s so yummy and pretty unique outside Kentucky parties. It’s called Benedictine and a few drops of green food color give it a delightful pastel color.

I had cucumber sandwiches in Great Britain for tea. I've had them at other tea houses here in the states. All were prepared differently, and all were delicious. I'm a huge fan of cucumbers. I use them on my sandwiches with all kinds of meat. They add such a nice crunch and freshness.
Hi from Southern California. I grew up in the 50s in Connecticut and remember asking my mother for store bought bread; she always made our bread and biscuits but *never* made corn bread. I only found out when I was grown that my father refused to have corn meal in the house. He'd grown up poor and they had to eat corn bread, and mush so often he couldn't stand it.
My mother always took me to the quilting bee that she went to every week at 1 of the members homes to help quilt a quilt that was in progress at one of the homes. We would go to that persons house every week until her quilt was finished , then start going to the next persons house that had her quilt top ready to start doing the quilting on till it was finished. Each member made her own quilt top but when it was time to quilt it, she would have an all day quilting bee and serve us a nice little lunch. Those were the good old days. I’m 88 now but I remember them so well and I had my own little sewing kit to work on my doll quilt that was made from the scraps the ladies saved for me. Waste not want not in those days. ( late 30 ‘s early 40 ‘s I was about 7 years old but my mama taught me to sew when I was about 5 and to take tiny stitches in a straight row. Sorry this is so long, guess I got carried away with my good memories. I love watching you cook Tammy and use lots of your recipes bc I still like to cook. Even if it’s just for myself now. Is that Chris singing at the beginning of the video bc it sounds like him. Very good voice.

We use cucumber sandwiches, chicken salad sandwiches, and others when our Women’s Home League would hold our spring tea and also for our bazaars. It brought in a few dollars for our church programs.
I’ve always loved those but have never made them. Your recipe seems easy enough. My kids will love them. I made chicken salad the other day and my kids ate it all before my husband got any! He works second and I thought there would be enough for him to take to work the next day. I had used 4 maybe 5 big chicken breast! My Mama made open faced sandwiches for showers by mixing crushed pineapple (drained) and cream cheese together on white bread and 1/2 of a cherry on top! Those are delicious too!

I make something similar. Use mini bagels halves, spread some cream cheese, add a slice of cucumber and top with some dill. Delicious

i love cornbread and cornmeal mush. its comfort food to me. just put a little molasses on it. yum! thats what i grew up on

I add a teaspoon of Hidden Valley Italian salad dressing mix. And its so good.
