    I use a thin spread of garden vegetable cream cheese on cucumber sandwiches. Lovely. Tasty. And still dainty.

    Dear Kevin, I am so glad to see you recommend the use of boiling water when making tea. In the UK we would normally add a small amount of milk to the teacup first, then add the tea. This protects the china from staining with the tannin from the tea and makes the tea less bitter. Thank you for a wonderful video.

    My daughter in law had a tea party for the little girls in the neighbourhood. My granddaughter was so excited!!! Girls were 4-6 yrs old. She put tablecloth on the grass with fancy flowered paper plates, plastic spoons and forks. Same flowered paper cups for tea. The little ones came at 1:00 pm. Long dresses, white gloves up past their elbows. Tierra's from the dollar store were a real hit!!!!
    They all sat in a circle and my daughterinlaw poured coolish
    tea from her China pot..
    She provided vanilla and chocolate wafers with icing on inside and some other fancy cookies. I think I enjoyed myself as much or more than the little girls. Seeing them sitting on the grass, long dresses, tieras and little white sandals with painted toes of course.
    Can't wait until next summer. They had so much fun. They all felt like princesses for an hour. Then back to the pool for the afternoon.
    Back to normal.
    Oh, now for a coffee and footstool, I'm tired grandma.

    You are always that good in your elegant and informative presentations, worthy of that level for national TV. You also speak well, enunciate and

    There are some aspects of British culture which I eally love and admire: Tea Time is one of them and today's videos suggestion by TH-cam is is sorely needed because relaxing is so important to health and that's why taking time out from everything to put a pause in it, defragment, Recalibrate and energize is so important because stress is the number one Contributor to Deteriorating cascading effect on on health.
    Closest that the Mexican American culture got to taking an afternoon break is called a Siesta. Growing up, I heard many Ethnicities criticize us for taking an afternoon Siesta, but decades later, reputable research revealed that taking an afternoon nap REFRESHES, REVITALIZES and REBOOTS one's body and brain, allowing for more energy + vision to finish the last half of work for the day.

    Your simple sandwiches are more elegant and much easier and tastier than the fussier ones! My mother always put a slightly damp tea towel over her tea sandwiches to keep them from drying out as she prepared the rest of the food. It worked very well. Enjoyed your episode!

      OMG! Here in the southeastern USA, we honestly put tea towels over top of breads or sandwiches. If the sandwiches are going to sit for a good while, then my mother would put them in covered Tupperware trays & add a few slices of apples into the trays to prevent the bread from drying out. The apples can then be used to dice up into salads.

    As a Brit well done. Butter also adds much flavor to a sandwich. My mom always dipped the cucumber in vinegar. Shaking the excess off. Cress sandwiches are lovely. Cheese & tomato a sharp cheddar, and I loved potted salmon. We Brits like milk in our tea & a tea cozy to keep the pot hot.

    I *love* the cucumber slicing tip! I do like the way the rounds look but you’re right they fall off/out and it’s hard to get a good bite. This idea is genius.

    I’m so glad Kevin that finally I found someone making these classic tea sandwiches that my husband loves!! Some parts of my country still have the British Colonial influences and we particularly take our tea seriously 😊like them!!

    When I make tea sandwiches, I use softened cream cheese with chives which gives a very nice flavor to them. I also make thinly sliced salmon sandwiches and cheese and tomato thinly sliced of course. Tarragon works well with the chicken as well.

    I once went to a summer tea on a rainy day at a local herbalist's shop. She had a barn in the back and dried her herbs from the barn rafters there. The rain on the barn roof was incredibly soothing. The rain also caused the herbs to intensely release their aromas . She served cucumber and tiger lily blossom tea sandwiches. And spearmint tea. That was over 35 years ago. It was an experience I will always treasure.

    I was raised by a Russian mother in China. We steeped the tea til it was quite strong. Filled the teacup halfway witj the strong tea; then added boiling water to the dilution we wanted or used a SAMOVAR. FRom the time I was 3-4 I was served tea, tea sandwiches and petite fours! Thank you for bringing back such wonderful memories. Cheerio and Huzzah!

    I'm 63 and still have never been to anything close to an afternoon tea. Well,I'm not dead, yet. Lol My Maternal Grandparents lived with us ,as I was young. Grandpop was born in Stoke on Trent, England , and came here as a preteen. He taught me how to make a proper cup of tea, and my love of tea has never wained.

    This video did my heart good; I’m a displaced southern girl living in very rural North East Washington state where afternoon tea is not a thing, let alone delicious tea sandwiches. This video does my heart good and reminds me of wonderful afternoons teas spent at Chez Philip in the Peabody Hotel in my hometown of Memphis. 💛

    Here in the South of USA we make tomatoes sandwiches as well. We lightly butter the bread though (rather than a stiffer application), which "leaves room" for the mayo. Homemade is always best but store bought is usually fine, just not Miracle Whip- too sweet...unless that is your intention which makes it fine. Then quarter inch slices of tomatoes, seeds removed to a respectable level, are pressed between paper towels- dish towels are even better, more absorbant- until most moisture is drawn off. Assemble: firm white bread, butter, mayo, tomatoes, similarly prepped bread to top. Trim crusts. Arrange on your grandmother's silver platter with doilies beneath ( never allow acidic foods touch silver). Oh, how snobby we can get!! Thank you for letting me recall a proper tea.😘

    Hi Kevin, this is Amy. I just love you're recipes and how you explain them. I was watching a lot of Queen Elizabeth videos and fell on one for afternoon tea. You were next video which totally excited me. Thank for all you sharing and caring. I like the scaps too to nibble on or I'll chop them up and mix them with some mayo or mustard(depending on what the scaps are) and possibly a hard boiled egg or shredded chicken or beef or ham and make another spred for a mystery sandwich. I'm from 9 kids so there was never any waste🙂

    I didn't see any cream. I saw lemon 🍋, which is nice and I know that there are some tea which are meant to be taken with lemon and sugar, but I always thought that because guests are always to be given options that one must always place sugar, lemon and cream, so that the guest may have their tea to their liking? That's how Mama always served her afternoon tea, and we had it every day. I always had either mint or chamomile for my tea. And Mama began taking afternoon tea, when she was a little girl, back when Victoria was still on the throne.
    Haven't done a proper tea since she passed, so it was nice to watch someone make their tea for a change. Lovely. ☕🍵🍋🥛🐄✌🏽🧓🏽

    Absolutely loved this! I bought my granddaughters beautiful tea sets when they were very tiny for their wedding gifts from me. All were under ten years of age. We don't generally have a tea time here in the U.S. or at least the general population but we do have teas and luncheons in lady's circles. I've always loved the idea of having a tea time everyday. When we were in Europe my favorite time of the day was tea time. I always gave my grandchildren little teas throughout the years. I want them to foster a love of tea as I have since childhood and start having afternoon tea time daily All the little sandwiches, tarts and such are so beautiful and dainty not to mention delish. I wish people in the U.S. would slow down and have a moment to just enjoy life and the simple things for a few minutes.
    I stumbled on your channel and decided to watch. Everything looks so good. I especially Love the Irish butter on the sandwiches. I will definitely try this. We keep Irish butter in our refrigerator at all times and absolutely love it. Now I've got to plan a tea for us!

    Our homeowners association recently hosted Afternoon Tea for 20 women. It was lovely with 5 different kinds of little sandwiches and 6 different sweet treats. It was lovely!

    When I was a child, I spent time with my grandmother and her sisters. In the afternoon, we would always have a "tea party" around the kitchen table. Happy memories! Sometimes, it was just buttered bread with sugar sprinkled on it, but we always had tea. Love the tradition!

    Dear Kevin, I am a 1/2 French 1/2 English Canadian. A little story about my grandmother. Grandmother and I would have our sandwich and tea everyday after my school. She was without a doubt a "true English Lady". She showed me how to sit, stand, walk, eat, dress, talk etc... Like a true Lady should she told me. Showing me how to set a table, serve food, prepare plates snd trays for service, present myself etc... Many times I have been told by people at meals "do you always eat and sit so well at a meal" Always makes me laugh. I miss my grandmother so very much. Thank you for the great memories of a wounderful part of my life. All the best to you.

    Very easy and instructive Kevin . I agreed with your choice of Irish butter , it’s really superior ...... and better still if you can get Glenstal Irish butter . It’s a “ summer “ butter using only milk from cows grazing on fresh green Irish grass . If you taste some you’ll immediately know why it is naturally delicious .

      Over the weekend I saw ladies making butter on TH-cam, and tried it. It came out very creamy; and easy to spread, but more pricey due to heavy whipping cream costing more (@$8). They make biscuits with the buttermilk rendered. Usually we buy Irish butter and probably will continue doing so. Will have to look for Glenstal. Thank you.

    Loved your video. The only thing I would add is that we tend to put milk in our tea over in the UK, otherwise your tea making was faultless! ❤️ And we often have a few choices of dessert including scones with cream and jam.

    A delightful video Kevin. I love triangle sandwiches. My Eleven year old Granddaughter made afternoon tea on the day of our late Queens Jubilee , we had bunting outside , it was a lovely memorable day. 🥰🇬🇧

    My mother was the socil coordinator for the Winnipeg Art Gallery. She up the very British scene by hiring a jewish caterer. Instead of boring cucumber sandwiches, we had four lay sandwiches wwith smoked salmon, egg salad, cream cheese, and blanched asparagus. Decadence is good!

    If you remove the crust before you put any filling on it you can use the scraps for breadcrumbs.

      I noticed that too. Would be a shame to throw all that away because it has filling on it. Otherwise it looks very tasty. Might try that out in two weeks when my aunt is coming for a visit :)

    L💖ve this and love finger sandwiches! I had high tea at Westminster Abbey in London 8 years ago. It was divine! I make my cucumber sandwiches with cream cheese but it has to be softened to spread smoothly. Wonderful choices. I love egg salad and chicken salad also. Thank you Kevin.     Update to previous post, husband tried your idea for the butter first and the cucumber sliced in lengths. Perfect sandwiches, he says thanks so much. Also, the tea reminds me of my Great Grandmother who would make us the treat of steeped tea as children. It’s a great memory.

      Mascarpone with strawberry or raspberry jam.. It makes a good alternative to clotted cream, if you can't find clotted cream. Good on scones.

      @@lizlawley6680 Mascarpone with jam sounds so good! I also make a clotted cream alternative by just beating unflavored whipping cream until it has the same consistency. Very hard to tell the difference, and it often tastes fresher than the imported clotted cream in jars (though I use that too). Yay to tea!

      I thought I remembered a video showing how to make "clotted cream" using whipping cream and baking it in the oven. I might be confusing it with something else. I always saw people using clotted cream on their scones, when watching TV and wondered if I could make my own and what it tasted like. I love the whole idea of afternoon teas.

    My chicken sandwich filling is the roughly but fairly fine chopped cooked chicken…a dash of salt and pepper. mayonnaise and then some sliced, blanched almonds….my daughter Sara Margaret Luisa’s favorite.

    Very fine sandwiches, but scones with fresh clotted cream are a must, if it is an Afternoon Tea. The tragedy is that clotted cream is usually not available, and many restaurants try to globally replace it with mascarpone, whipped cream, butter...but no. It just reminds of the fact that clotted cream is unique, congrats to the Brits.

    I love tea parties. My mom and I used to have tea parties every so often. I love adding cream cheese to some finger sandwiches instead of butter. I would love to see more tea foods. Thank you for today. P.S. the butter with Raspberry jam I’d absolutely phenomenal. (seedless of course).

    Thank you Kevin Lee. I always enjoy your cookery demonstrations, as you are a real gentleman and very relaxed. I have just watched your Sandwich making and I think your demonstrations would be ideal for teaching children how to make sandwiches. You explain it so easily as well. I think Teachers in schools should use your Utube demonstrations. If I was still doing Teacher Training, I think I would use your demonstrations, as a Lesson for the children, as you are also visually very pleasant to watch and you give good attention to the viewer in a way that we know that you care about your cooking.
    I also like your anecdotes about your friend, Albert, who was Princess Margaret's Butler and how he invited you to Tea! Very amusing and interesting. I could just imagine you in 'Royal Circles'! Thank you 😊 X Mary

    I used to be the cook in a rest home, and I used to mix up cream cheese, and tomatoes in the blender, it complimented the cucumber sandwiches.

    I love all this it’s wonderful - I lived in France an hour away from Paris - my husband is French & we used to drive to Paris a lot, we had a friend - actually she died this year at 98, but she was a real Parisian - she lived in Paris during the occupation -we were very close and she never had children - she was very proper and sometimes we’d go to her house for goûté (tea) or l’apéritive and would always have champagne but in France you can find delicious champagne for not so expensive and you could never find it here in the US - sometimes we would go to the champagne region and buy a case or 2 from local small producers. Sometimes at her house we’re all eat oysters for dinner with a salad, or we’re go to Normandie or l’île de noirmoutier or cancale and just eat oysters by the sea with a glass of white wine - such incredible seafood that just doesn’t exist in the US - I loved eating in restaurants with her and listening to her stories of the war and the wonderful restaurants we ate in - I love French service - we also have friends that owned a Michelin star restaurant in Paris - one was the chef and his husband the sommelier, they are retired now but he travels all over the world as a sommelier - I acquired French nationality but we had to return to the us to be with my mother who had a stroke but hope someday to return to Europe I miss it so much - I love English tea as well and all the etiquette that goes with it - looking forward to seeing more of your videos

    Looks delicious! I do like milk in my English breakfast tea, no sugar. Sometimes if you put sandwiches in the fridge for a whoie it's easier to cut them.

    I made some chicken salad tonight from some shredded chicken breasts I did in my slow cooker. I just winged this recipe. I put the chicken in a food processor like you did and added a little Lowrys seasoning, a little garlic and onion powder, and white pepper.. For the dressing, a little mayonnaise, a small amount of finely minced celery and scallion, a pinch of sugar, a pinch of dried tarragon leaves, and a dash of white wine vinegar. We'll see what it tastes like tomorrow. 🤞🏻🤞🏻

    Everything looks delicious !! One hint l learned from the best chicken salad that I have ever had. You add a splash of rice vinegar. Sounds weird. But it really enhances the flavor. My brother years ago worked as a cook at a super popular restaurant. I asked him how their tuna salad sandwiches were so great. He said add a little vinegar. Blessings from California !! 🌹

      That’s fine because crusts are usually not removed for lunch sandwiches but are never left on for afternoon tea finger sandwiches which is what this video is about.

      @@almaburns6562 Hi Alma, depending on my mood, sometimes just butter, sometimes a little mayonnaise and sometimes softened cream cheese. I also like fresh herbs, whatever is on hand that day.

    You just popped up in my feed so this is my first time watching. I am delighted to have the opportunity to subscribe. I also think that shapes should be exclusive to each filing. I also like cream cheese with finely chopped walnuts and a smidge of honey and tuna salad. I have successfully used cookie cutters for interestingly shaped sandwiches although there is more waste with that method. I look forward to more sandwich and sweets receipies..
