    Gaaaah! That's the dipping sauce I've been looking everywhere for! I was already thinking the peanut sauce had pate and annatto oil added to it but this is the only video I found that actually had it in the recipe! Thank you, Helen! 😙

    Watching You Tube videos of Vietnamese cuisine is making me fall in love w/ that food . Unfortunately here in the USA , the Viietnamese restaurants are such disappointing fakes . The choices are so limited . Tutorials from you including prep tricks are much appreciated . Thank you very much .

    You can use marsh mellow sticks or camping reusable stainless steel sticks. I always use Smith Green apple and slide them thin to substitute the sour star fruit. The star fruits are not easy to find in the States.

      Hmm.. that might be difficult.

      You may want to watch how to make fresh and unset seitan (aka wheat gluten or wheat meat), and use it along with tofu in place of smashed pork. For the dipping sauce, you can use fermented bean paste instead of pâté. And you can use some kind of juicy fruits/tubers in place of fat pork... I don't know if it will work or not, I've just came up with that idea. But surely, the taste and the feeling should be totally different.

    Hi Helen. I've tried your recipe, but the Nem has 2 issues, the Nem was too dry, and not that sticky ( dai). Do you have any advise?

      Tom Nguyen did you remember to baste with that oil during grilling? As far as the dai part the more you mash it in the bowl the dai-er it becomes.

    Do you mean baking soda (bicarbonate) or baking powder? I know soda is used for tenderizing meat in Chinese restaurants.

    When I make nem nuong I usually fry up egg roll wrappers for the crunchy part. There's a famous place in L.A that is known for their nem nuong.

      Valerie Cao brodard in Garden Grove? Their pork spring rolls have bits of fried egg roll wrappers. The extra crunch with the spring roll really makes it much tastier!

      You do need to heat the oil to get the color

      Here in Vietnam, they sell pork fat separately, but yes, you can get it from pork belly. I'm so happy that you enjoyed my videos!

    What is the orange sauce in the beginning? Is it a different sauce than what you made?

      Most restaurants have a family secret sauce recipe, but she just made a variation of a sauce that is traditionally paired with this.

      That annatto oil/color, she used that to marinate then add a bit to the pate sauce later!

      This made from a kind of nut named Hạt Điều in Vietnam, and used popularly in VNese dishes. This has a very strong smell and makes cover onto the dishes. very tasty
