      I don't use ketchup in most food. Many think u need it to make gravey but u don't. U don't even need breadcrumbs, flour and stuff however the crumbs add more flavour.
      Even the other way to stew u don't have to use any Browning and soya. There are ways to get it done.

    The technique you use to develop the gravy is also an old world Italian technique used to make Sugo, one type of which is a very flavorful meat jus (or gravy, depending upon how it's made). I can tell your recipe and technique develops a very deep, meaty flavor throughout the dish, and doesn't dilute the meaty flavor of the chicken itself because you're not leaching out the flavor into a massive pool of cooking liquid; you use just enough liquid to conduct heat into the meat and keep it just moist enough. I have seen Brown Stew Chicken ruined in so many different ways so many times it has become discouraging. Watching your video was like a deep breath of fresh air. I just now subscribed.

      Yes Italian cooking came directly from Africa..thats why Italians eat spicy food, while the rest of europe is basically no spicy food.
      The rest of europe uses watered down dishes, but Italians along with carrabian,asian,and indian have a very close to authentic dishes from Africa. All spicy....lol.

    My God! It's Wednesday but you bring me back to Sunday when I use to go to visit Grandma after church. I didn't know how they made the brown stew so good and authentic but now I see why it was so good. This is pure love! Wow! My girl! Big up yuh self!     Love that pot on the stove. My grandmother is from the island of St Maarten, N.A. and she had one just like this. My mother use to make her stew meals in one too. These are the best pots to make meals in.

This remind me when I was live a country with mama an kill a common fowl it tuff like wow dem say ice soften chicken but never have no fridge is rusty nail I use to see my mother put in the pot to soften it we nuh dead. 3stone make the fire an geenie floor polish we use to lite the fire. those were the days it smell good sah. big up camera girl.you need to open a restaurant man.

    She reminds me of my mum. A tiny woman though but she can cook. She does not use sauces for browning but browns the meat in the pan before adding the thickening and the vegetables. And of course we use the firewood. Such nice smell. I truly miss it all. I can just imagine how this cooking is smelling. Luv your cooking.

    Finally someone who cook brown stew the real way. My mum never taught me to cook brown stew chicken with browning or ketchup. I 'm not in JA so the outdoor cooking cyaa work but it work almost as well on gas cooker
