    Wonderful tip dredging the shrimp in cornstarch before pan-frying! The shells are part of the delicacy of the dish, and this makes them so crunchy even my more finicky friends enjoy them with no complaints about the shells-one didn’t even realize he was eating the shells until his second helping LOL

    I made this shrimp tonight, it was delicious. I did add some rice flour and a bit of salt to the corn starch, I also added a bit of mirin, sake and lemon juice to the garlic butter when cooking it at the end and it was amazing!

    Giovanni's marinates the shrimp with the olive oil, butter, and other ingredients, then cooks as is. Your recipe looks good. I do basically the same but add some white wine in the marinade as well, and I don't use the corn starch (which looks like a good thing to try). Aloha!

    Stayed in kahuku for two weeks just very recently. My wife couldn’t get enough of this dish. Making it myself for the first time!

    I used to live there for a couple of years in the 90’s ... I love going there for lunch on a Sunday ... I used to order their half and half ... half scampi and half spicy ... gosh, I am making this asap!

    OK here is a suggestion for those who never eat the shell and head of the shrimp. Get two separate batch of shrimp one with the shell and head and the other without. Cook them the same way then let me know which batch had more flavor.

    It can take more effort than it's worth to peel garlic that way. I used to do that until I started smashing the cloves with a knife; the skin practically falls off the garlic after that. Coring each clove also helps.

    So I can finally comment in this. I’ve had this video tab up in my phone for …probably a year or two. The moment finally came last night where I actually committed to making this and yeah it was worth the wait. Really brought me back to having Giovanni’s on holidays! In future I’d probably not cook with shell on and reduce butter amount slightly but outside that it was delicious. Great video!

    Thanks for the recipe. Giovanni's is a MUST stop for us whenever we go to Oahu. We always get the scampi.
    International marketplace has changed a lot. When I first went there 10 years ago it was not a fancy mall.

      Omg! My first trip to Oahu was in 2014 for Thanksgiving. The international market back then looked like a traditional flea market with character! My husband and I went this past Christmas; the market is now just a bunch of fancy stores! Touristy mess!

    Thank you for sharing your recipe! Just a note though, in the description it says 1 TABLESPOON of paprika instead of 2 TEASPOONS for the marinade. I found out the hard way by looking at it when making it. Delicious recipe!

      Yeah all tourist here stop by but romy’s is the oldest shrimp resto they said and we waited 1 hr bcoz of the long queue..but its worth the wait.

    Glad you commented that the shell is still on, because I was wondering about that. I don’t think I have ever eaten shrimp with it’s shell on. Will have to try it. Looks so delicious.

      You need to try it! It's the best when fried! It makes it extra crispy and the shrimp meat juicy and delicious!

    “Alae” is pronounced “uh lie”. And your shrimp honestly looks better than Giovanni’s. But if you are ever back in kahuku, try the Famous Shrimp truck a few blocks away from Giovanni. Even better.

    I made it this way with cornstarch and I really liked it, i was amazed i now love the shells😋 I did add a tsp of oyster sauce to the sauce because I'm actually from Kauai and this will be new way to cook shrimp. THANK YOU🤙 ALOHA🤙

    I like your video and the explanation of the process. I was watching another video earlier and when cooking shrimp, the chef said shrimp need to be cooked on high heat. You chose a medium-low heat. I will try it your suggested way next time. Thank you.

    Great presentation in terms of prep and execution. On a whim, I recently started frying my shrimp with the shell on thinking the shell adds more flavor while preventing the shrimp from over-curling and getting rubbery. But my question is this: seeing as you're frying the shrimp with a coating of starch, do you actually eat the shell along with the shrimp?

    Is the shell a little tough? I feel confused lol I always thought it wasn't good to eat the shell, but it does sound really crunchy and tasty.

      The shell is edible, it's not tough in my opinion. The shell is definitely crunchy and holds a lot of the shrimp flavor :)
