How to make Banana Coconut Muffins

  • I will show you how to make these delicious muffins.
    Recipe:
    1 1/4 cup of all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon of salt
    2 ripe bananas, mashed
    1/2 cup unsalted butter, melted
    2/3 cup of granulated cane sugar
    1 large egg
    1/2 teaspoon of vanilla extract
    3/4 cup unsweetened flaked coconut
    1. Preheat oven to 375 degrees F. Line muffin cups with paper liners.
    2. Whisk flour, baking powder, and salt in a bowl.
    3. Whisk in a separate bowl bananas, butter, sugar, egg, vanilla and 1/2 cup of coconut flakes. Whisk to combine. Then fold in flour mixture.
    4 Put batter into muffin liners about 3/4 full. Then sprinkle 1/4 cup of coconut flakes on top of the muffins.
    5. Bake for 25 minutes or until toothpick inserted in center comes out clean.
    6. Cool muffins on a cooling rack.
    7. Serve warm or cold
    These are excellent to freeze as well. Muffins keep about 3 months in your freezer. If you want the muffins sweeter you can add the sweetened coconut flakes instead of the unsweetened ones.
