Very soft iron, because it is impossible to call it steel - it is VERY easy to engrave. The whole secret of their sharpness is that they almost do not touch the cutting board - they do not dull the edge of the knife on the board

theres a resurgence in knifemaking/blacksmithing but its hard when your barely able to scrape a living. I've been pursuing knifemaking and forging since i was 18 and got serious into trying to turn it into a career when i turned 20.... im lucky if I've made a couple k out of it where I've spent 10s of thousands in equipment and materials. sadly most would rather buy a cheap chinese knife then drop big amounts on a handmade one

I'm a metal fabricator too and the hand movement to grind and the forge hammer drop positions are key to this process. I proud of my craft also. Going on 50 years in the craft.

Ковка спусков на холодную? Хм... интересный вариант. Сталь мягкая, малоуглеродистая - нож быстро будет тупиться, но так же быстро и натачиваться. Наверное затачивать его придется после каждой разделки туши. Хотя я бы предпочел, чтобы нож не затуплялся как можно дольше. Всё равно работа отличная, как не крути. Мастеру долгих лет жизни.

Around 4:04 he seemed to be working the metal almost completely cold… is that a certain type of strategy/method? I’m very new to forging and am trying to learn as much as I can. I’ve always been taught that working cold metal-even slightly too cold being below the recrystallization temp- can cause major stress to the atoms, rendering the steel brittle and making it prone to cracks. Now, clearly this man is a master of our craft so if anyone knows the answer to this, I’d love to learn why.

この刃物会館で現代の名工作の尺牛刀買ったけど薄くてしなやかで良く切れる。
鋼を仕込んだ鋼材から成形してく刃物だけど絶妙なしなりが使いやすい。粉末鋼の固い刃物よりも使いやすい。この包丁も同じなんだろうと想像がつく。
