Beautiful Tuna knife and all the knives in the display case are stunning, truly artisan work. I hope there are young people to carry on the tradition of hand forging, sharpening and finishing. Great respect to the crafts people at the knife making works.

Very soft iron, because it is impossible to call it steel - it is VERY easy to engrave. The whole secret of their sharpness is that they almost do not touch the cutting board - they do not dull the edge of the knife on the board

I liked that senior guys breathing technique. Was he suffering of high blood pressure. He perfected it. Anyways beautiful hand made knives.

theres a resurgence in knifemaking/blacksmithing but its hard when your barely able to scrape a living. I've been pursuing knifemaking and forging since i was 18 and got serious into trying to turn it into a career when i turned 20.... im lucky if I've made a couple k out of it where I've spent 10s of thousands in equipment and materials. sadly most would rather buy a cheap chinese knife then drop big amounts on a handmade one

because they enjoy it and it gives them meaning and purpose in life. sitting around doing nothing is how you get depressed and demise even sooner. unlike in the US the East Asian cultures are different, they take a deep pride in their work. It's just what they do.
in any country and culture some people is so commited to work because they love what they do. those people will die happy at their workplace

I'm a metal fabricator too and the hand movement to grind and the forge hammer drop positions are key to this process. I proud of my craft also. Going on 50 years in the craft.

Сталь мягкая, малоуглеродистая - нож быстро будет тупиться, но так же быстро и натачиваться.
Наверное затачивать его придется после каждой разделки туши.
Хотя я бы предпочел, чтобы нож не затуплялся как можно дольше.
Всё равно работа отличная, как не крути. Мастеру долгих лет жизни.

As a chef, whenever I have seen craftsman cutting up whole Tuna, my first thought is "where did they get that knife"? Now I know part of that answer. Amazing work. Way to go humanity.

Вот еще одна вещь, благодаря которой меня завораживает Япония, спустя столько лет существуют ремесленники, которые делают вещи как делали их много-много лет назад и эти вещи до сих пор пользуются спросом. К сожалению многие страны утратили эту свою изюминку. Очень надеюсь что дело этого человека будет и дальше жить, не уйдет в историю вместе с ним и у него есть приемник.

鉄板切って削って焼入れして刃付けしただけでも充分切れるけど、やっぱ鍛造の打刃物には切れ味も美しさも全然敵わない。
美しさがあることで、道具に畏敬の念も持てる＝危険な物を制御する心が養われるんだよねー

Unfortunately after 65 years in a forge unprotected it's probably the smoke and forge-dust affecting his lungs.

この刃物会館で現代の名工作の尺牛刀買ったけど薄くてしなやかで良く切れる。
鋼を仕込んだ鋼材から成形してく刃物だけど絶妙なしなりが使いやすい。粉末鋼の固い刃物よりも使いやすい。この包丁も同じなんだろうと想像がつく。
any idea what the blade steel is? it appears to be pretty mild. fascinating process for quenching with clay and high carbon finish. the clay could be shaped to provide a real hamon.
