I make a chicken tortilla soup similar to yours - but I add corn and canned seasoned pinto beans - it adds extra flavor and makes the soup thicker - I'm definitely going to try frying my own tortilla strips next time and adding rice - Looks delicious - thanks for sharing!

For example, use vegetable stock instead of chicken stock; if you want "chicken", use some of the plant-based chicken alternatives (if you've never had those, give them a try, they really do taste like chicken and are quite good); use almond milk instead of cow's milk, etc.
I was inspired! I had a small back of baby yellow potatoes to use up, a pkg of bacon in the freezer and popped out a 1/2lb of 90/10 hamburger to make it a little heartier. My husband loved it and had seconds! Always love your recipes. Can’t wait to try the veggie as I’ve made the cheddar broccoli (it’s a standby around here). Rained allllllllllllllllll day here yesterday.

I love making soup in the Fall/Winter. All comfort food. I made a crockpot of Spaghetti Sauce yesterday. I know it will taste even better today...after all of the spices meld together. I made the sauce with my own garden tomatoes. I have the same Dutch Oven as you do. LOL! My spaghetti sauce was so delicious! Have a great weekend Renee. I know that I will. Good morning, Renee, it rained here last night so our neighborhood celebrated Halloween Wednesday night. I made taco soup and potato soup, we had about 30 people who dropped in during trick or treating…our daughter, son, DIL, some of their friends, their kids and a few of our neighbors. It was a full, loud house but so much fun!! Soup is just good for the soul!! I’ve never made homemade cheddar broccoli soup. I'd love for you to try my recipe. 🍲 Minestrone by Amber Klein Brown: 1 to 2 pounds breakfast sausage 2 Tbsp oil Note: If using sausage links, cut into bite sized pieces with scissors before browning. I like Jimmy Dean sausage when I don't have links. Both taste equally good. Add: 1 onion, diced 4 celery stalks, diced Sauté until unions are translucent. Add: 4 garlic cloves, minced 2 teaspoons dry Italian seasoning, NOT powdered 1 teaspoon red pepper flakes Sauté for 2 minutes. Purée: 2 lb of fresh grape tomatoes Then add to soup. Note: I like the grape tomatoes from Costco. Any tomato will do, but grape tomatoes provide the best flavor. Stir in: 6 to 8 cups water (approx) 1 Tbsp salt 15 oz white beans, drained 15 oz can garbanzo beans, drain 3 cups cabbage, diced 1 to 2 chicken breasts Bring to a boil. Cover. Reduce heat, and simmer 45 min. Add: 1 to 2 bunches Bunch Swiss chard, diced Note: Mince or discard the stems. Simmer 20 minutes. While simmering, remove chicken & cut into bite sized pieces. Just before serving, return chicken to the soup. Note: If you like a meaty soup, up to four chicken breast halves can be used. Drumstick also work well, but make sure to find and remove all the bones before serving. Serving options: 1. Plain 2. With 1 pound pasta -macaroni -rotini -penne -mostaccioli 3. With rice Note: Cook pasta or rice in a separate pan according to package directions. Do NOT mix pasta or rice into soup when storing leftovers, or freezing. The pasta or rice will swell and turn to mush. Serve pasta or rice into soup bowl, then ladle soup over it. 4. Top with Parmesan. 5. Top with croutons 6. With bread sticks, garlic bread, or buns. Note: Ladle cooled soup into sandwich sized baggies, and freeze for individual servings. Make fresh pasta, or rice, if desired. Freezing a gallon sized bag of soup works well for a quick family meal too.
