  • Hello everyone! We are back this week with our simplest recipe which is espresso. Most of budget machine can't brew great espresso. Budget machine can achieve lower price point compared to higher tier machine because they compromise on water pump, pid controller and many more. Higher pressure is needed when brewing great espresso and stable high temperature is needed as well. About 89-92 degree celcius of water is needed during extraction process. Lower than that, the coffee will become underextract and higher than that, it might ruin our coffee taste.
    I'm using Delonghi Dedica Machine here. It is in midium range category. It can brew good espresso but not great espresso (James Hoffman, 2020). However, I want to test the taste. I brew it, try to get the highest temperature I can get to compensate the lower pressure pump.
    The result? I think it is good but great? Hmm, almost great but not there yet. Why I said good? Because I can drink it. Most of the espresso I brew using my other machine was very harsh to my tongue. This is not. The taste is balance between sour and bitter, and has dark chocolate taste on it. I would say by having this in the morning will help anyone to stay awake for the whole day. My coffee choice helps me alot. By choosing medium-dark roasted coffee, it helps reducing the acidity of the coffee. Ligher roast tends to have acidity and sharp taste on it.
    Overall, I am happy with the result. I like to experiment different variables for the coffee. For example the dose I use, the ratio, type of beans, origin of beans, roasting level of beans and many more.
    For those who has similar machine, if you want to try the recipe:
    1. 15 grams of coffee beans (medium-dark)
    2. 1:2 ratio, means 30 grams of espresso
    3. Higest temperature setting

    May I ask if you would grind coffee freshly before each brew, or you would grind them in batches say, enough for a week?

      I usually would grind freshly. But sometimes I would grind it in large batch
