The tiny pancakes in Dutch are called "poffertjes" (diminutive, plural). Regular pancakes are called pannekoek (old spelling) or pannenkoek (contemporary) - which as you can read is the same as pancake. The difference between the two is that poffertjes are from dough that had yeast added and that's why they become "puffy" - recognise poffertje in that? Later in life I found out I have a serious gluten problem and so I withdrew from both camps. The dessert like adaptation with strawberries and a fruity sauce seems a very nice modernisation. Yes, the dipping of the stroap (not stroop) wafel (with a staccato hard a like in Milano) in chocolate sauce seems a nice modernisation too, if the chocolate were pure.

Probably my favorite was simply having good bread. Also, definitely see Amsterdam, but make time to visit other cities.

My daughter visited Amsterdam in November! She loved it! She's going back in June to go camping.. She brought back stroopwafels & Toney's as well!
