    Thank you both sooo much for sharing! You are both so inspirational! We are a farm family of 5 girls and all of us girls work/help on the farm! I am fourteen and I hope to inspire and educate on my channel like you two do on yours! You touch so many lives in ways that you are probably unaware of! Blessings to you from our farm in Kansas!

    Great Pantry Chat. Thank you. I wish I could afford a freeze dryer. They would lesson my work load as I am the only one who tends to the gardens and preserves our food. Everyone else in the family works away from home and I am 60 yrs old this year. BUT I do my best.

    I did exactly what you advised this year. It's my first year growing anything and preserving anything...And yes it was overwhelming where to even start. The pressure canner and steam juicer I purchased to facilitate this are American things, we just don't preserve that way in my country ...they had to be shipped across the world to me at ridiculously highs prices thanks to the pandemic.I had to watch lovely ladies like you two to even learn how to preserve that way...But we got that sorted :-) I chose tomatoes and basil as my primary focus this year with a goal to grow all I need for next year's food...and my daughter chose garlic and onions to grow for fun * giant smiles* We grew every herb we eat this Summer. I also planted 40 tomato plants for a household of 2 hehehe and my daughter planted 800 onion seeds " just in case most don't grow." But we have that all in jars now and there is enough for at the very least 2 years...Possibly a lifetime hehehe. Clearly, we made some mistakes estimating how much to plant because the advice isn't readily available to us...but an over-abundance is wealth and I'm so excited for next spring's garden.

      @@n.s.7223 I'm in Australia. We typically preserve using the "bottling" method and Fowlers Vacola system here...so fruits are preserved in simple syrup or alcohol suspension, and we make basics like jam...but our meat we typically preserve using Italian methods like ham, prosciutto and salam, confit suspension and the much older salted and corned meat methods...I didn't even know I could preserve it in a jar! But I think I'm entirely in love with the convenience of stews, pot pie, and spaghetti already prepared as a complete ready meal I learned through the American preserving channels...

    I'm so glad you shared about dad, mine is gone several years now, but the summer after loosing my mom and canning without her. I've been going the the same farm for 30 years Letta (the owner) stood there crying with me, in the middle of her storefront. Its still hard a few years later and more lonely. Don't be ashamed of those memories, cry if you need it. 😊

    I love the bit about Melissa's Tar Heel Pole beans from her Dad's family. A couple of years after my Dad passed my husband was cleaning out an old fridge (it has stopped working and we used it to bury as a little cellar) and found a little jar of some bean seed that my Dad had saved. I now grow and save it every year. Just this morning I mailed some to my only sibling because he is tip toeing into gardening this year! I always feel like my Dad, who was a wonderful provider and always made sure we had plenty of good food to eat, is still providing for us.

    I gambled a little this year, I had some old seed, some where 10 years old, and I decided I'd try them, they had made several moves with us, one cross country, not always the best storage. I was very pleasantly surprised with my germination rates, so I'd say always worth a try.

    In Australia pumpkin is only eaten savoury. Mixed in with mashed potato, roasted, pureed in a risotto, roasted and cubed in a salad with spinach, pine nuts, feta etc Delicious! The idea of winter squash in pies etc is almost unheard of here.

    I love watching both of you and value your wisdom. Having you both at the same time was like icing on the cake. A tiny bit of wisdom from me (66yrs old) is to purée your winter squash and add it to your soup base. I sometimes get canned pumpkin in sale after the holidays and adds so much texture to beef stew or variations thereof. Sending warm hugs from Texas. 🥰

      Use pumpkin lt to make pasta noodles or ravioli. It's pretty orange and delicious. Dehydrate small chunks and add to rice dishes. Boil it smash like potatoes.

    So, Melissa's book is EXACTLY what everyone wants. If you plan on canning the tomatoes and run out of jars or hard to find lids, having alternatives right at your fingertips is PERFECT.

I did the same with my hubby and he did that with me too ironically! 😂 We’ve been married for 13 years and I still ask him to make the magic meal that hooked me on our first date.     Thank you so much for sharing your life. We are helping raise 10 grandchildren. It is a daunting task, but you have made me excited again. We are moving to Idaho in the near future to get out of the rat race. Your videos are invaluable about land, gardening, canning, EVERYTHING!     if you also have a lot of eggs, then you might consider pumpkin pancakes as a way to use up some of your pumpkin, also consider roasting cubes of pumpkin, onion and chicken with some raisins sprinkled on top for dinner, (also works with other squash of course) anyway just a couple of uses.

    I just want to say how grateful I am for both of you ladies! I am a 48 year old “grandma”, who has been on a journey of being more self sufficient and healthy. I have learned SO much from you both, and look forward to your new videos. I have learned about how to plant my fruit trees this year, to composting, to what to do with our raw milk, and starting seeds, to growing enough for my husband and I and a little extra for our kids and grandchildren. I have Melissa’s family garden planner, and look to you both for such valuable information and just want to thank you both for your time in educating us all!

    I think this is a great chat overall and I appreciate what you both are doing for people seeking this information. At one point an herbalist recommended focusing on 1 herbal plant for a season as well (learning the growing conditions, medicinal values, and how to apply it in life.) I just want to point out one consideration for the time we are living in. Food shortages, livestock culls, seed limitations, and more self-sufficiency restrictions are all prevalent in our lives. I would encourage food growers (new and experienced), to research food consumption averages for their family size (how much veg, potato, fruit, meat, etc per week), determine your growing/grazing space and do a soil test if applicable, research plant yields to determine how many plants are needed to give your family enough produce(add more to account for plant loss), invest your time in learning what the plants need for nutrients, sun requirements, etc (this will save you time in the long run). Fun fact - plants that are not nutrient-deprived, whether the soil is missing the nutrient or the plant is not accessing it for a reason, will not be attacked by predator pests. We are shifting gears this season on our farm. We will be growing fewer plants per crop (for example shifting from primarily bush to primarily pole bean) and focusing on higher yields, soil nutrition, quality plant production. There are other options for those interested in locally grown produce that dont have access to enough space - buying in bulk from local farms, local berry patch picking for bulk fruit, at farmers markets you could ask to produce/meat/egg vendors for bulk orders and have a food preservation party. We are considering offering a style of a community garden but at our farm (people interested would have access to our manual tools, irrigation systems, seeds, etc.). Food for our families is so important. Investing the time into learning how to grow, preserve, and absolutely apply it to the nightly menu is something I want my children to know for their own families someday. Less factory food and more nourishing food from the ground beneath our feet. God bless you both.

      Yes and crop rotation as well as natural methods of pest control. Moles nearly wiped us out this year already. We pulled the beds and put hardware cloth down. Traps didn't cut it and they laugh at castor oil.

    Winter squash : cubed into relatively small cubes , then add them to soups and stews. They rarely add a whole lot of flavor, they will barely be noticed by the kids and adds a whole lot of nutrition and stretches a meal.

    Enjoyed the 2 of you together so much! Using food to catch my man? Sure did! And 20 years later, he's still asking for the same meals. This will be the first year I'm going to try to save onion seed. I use onions more than any other food and thought I needed to learn how to "close that loop.". Thanks for all the inspiration, girls❣️

      You can also eat around the onion, save the heart & plant it again, and use that 2nd one for seeds & 2nd harvest. You can eat an onion, twice!

    Winter squash delicious savory ideas: (pumpkin/butternut & acorn )
    autumn bisque, roasted, in Mexican dishes, on pizza, with rosemary in artisan or sourdough bread! In soups or chili
    (I find if your looking for a sweet bit like you would normally use corn you can often sub out the corn especially with butternut type or sweet potato)
    Sweet: Pumpkin bread or muffin’s are great too! And you can use the winter squash and sweet potato in tons of desserts and get away with no sugar (I sub for coconut sugar, date sugar or maple syrup usually)

    You ladies are awesome. As for winter squash recipe: Slice about 1/4 inch, roast with olive oil/salt/pepper, make a pizza dough, use a creamy thickish sauce on the crust, lay on the roasted squash, herbs, and even a few roasted red peppers or thin slices of preserved tomatoes. :)

      Exactly. I moved from CA to FL, and noticed all the molds in the air cause rot exponentially here. I'm not sure how effective drying fruits etc will be, with all the moisture in the air. Smh. Scary times ahead.

    Thank you for this video! It helps a lot and is inspiring. I started during the lock down with cucumbers and 1 potato pot. I was hooked. Last year I was the potato,cucumber queen and ventured into corn. This year I'm adding green beans and squash.

    We eat a LOT of winter squash throughout the year. I cube it and use in curries, stew, and pasta dishes, puree in soups. The sky is the limit. It is very versatile.

    Thank you so much for sharing this. I live on the coast near Savannah GA and tomatoes and peppers grow so easy here. We haven't tried growing a years worth because they grow best in pots and I only have so many. But this year our plants were still producing and we were still harvesting in early January. It was amazing but it just goes to show if something grows well in your area you may not need as many plants as people in other areas.

    You’re in for a treat, freeze-dried celery turns out great! I ordered a case of it from Azure, and it took a couple loads but got it all done.

    I’m in South Georgia so I can usually get two or three gardens a year. But I’m new to gardening and also new to becoming self sufficient. I’m also not in a rural setting. We have a one acre lot. But all of your videos have helped me so much. Thank you

    I love the idea of neighbors collaborating with seed saving, that's a really good option for urban homesteaders. Thank you.
    Also one of the things I started last year was keeping a written record of what I've preserved as I am preserving them so basically it contains the date, food type and how many pints or quarts or whatever. Then in winter when theres time for inventory I can see what I have left and make decisions from that about what and how much to grow the next year. Just thought this might help someone.
    Looking forward to the book, I'll be checking that out.

    I did the chicken pot pie and it was THE BEST!!!! Ifreeze dried it too.. going to make more.. I have never made a better pie! Thanks Carolyn 😊

    Haha its true, a way to a mans heart is through his stomach! My fiance is super picky and weird with food, it took me a year to get him to eat just my cooking alone. He only ever ate his moms cooking. But now, he will only eat my cooking. Im proud of that fact considering how picky he is. But i know his favorites and just mix those in here and there and keep him happy! He works hard for us so i figured a delicious, healthy meal is the least i could do! I already have my starts for my garden inside, so as soon as the weather is right, they'll be getting transfered outside! Im super excited because this is the first year that we will be getting all our veggies and fruits from our garden, so im nervous and excited all at the same time!

      Oh, btw, ive been gardening for a long time now, but ive always had to supplement stuff here and there, but now ill be doing that little extra bit and fill in what we wouldve normally bought from the store. So im super excited! Theres never been a super lot that we've had to supplement but I wanna phase out the store bought stuff completely.

      Oh, meal planning, when i was a young mom, my sisters and i all lived in the same house, there was 4 of us with our brother. We split the bills and food costs and what not, we were lucky enough to have our mothers house that was large, but, it was easier for one person to take a week and then plan groceries for the month. So once your daughters and sons get old enough, you can have them plan out a week for meals and then its easier to plan your months worth of meals! Then it depends on how much space you have if your going to a store for groceries, or making sure that your not to similar to someone elses week, and get a base of the foods and look at what you have in your pantry and just go from there. It helps when you have multiple people living together and being able to plan a week each.

    Love ya both! Inspiring! So funny. I grew celery for first time last year. I chopped and froze in freezer bags for serving sizes, so I pull one out for meal prep, and I've had enough all winter :) So looking forward to doing that again.

I remember finding Mellisa before I even buy my little farm. Now I am applying as much knowledge as I can. I am already 6 months in my new little farm. We already have our freezer stack with our pasture raised chicken. We went through two chicken processing already! We have beautiful egg layers and our hens, quail, ducklings and turkeys are doing great! We are about to take the leap and getting our milking goats. Things are changing drastically so we have to continue preparing and teach our little kids to learn how to be self sufficient.

    Thank you! Such goos advice starting small. I wish we had started smaller when we started gardening. Squash has been the easiest for us to grow a year of. Our families favorite way to use pumpkins and winter squash is in chili!

    Good morning ladies. For those who can not or do not have room to garden, I have been telling them to go buy frozen or gallon canned foods and dehydrate them and put them in jars. A whole gallon of peeled or diced tomatoes is only 3.00 dollars as of now at cash and carry. Use whatever you can to put up food for long term storage. I have gardened for many years and canned but not everyone knows how. Hugs

    Helpful tip for old seed you can take a lil bit of hydrogen peroxide 3% mix with water soak for about an hour then soak in sugar or honey then soak in a fertilizer or root stimulator for germination this process was actually used to revive 89 year old seeds ✌️💖🌱
