Thank you for a simple, easy,excellent bread recipe! I made this recipe today and it is light and fluffy…delicious! I used all purpose flour and removed two tablespoons per cup and replaced with two tablespoons of Vital Wheat Gluten, which converted my flour to bread flour. It works likes a charm and saves a trip to the grocery store.

Melissa, I think the covering of the yeast helps maintain the warmth of the yeast growing environment just as it helps the bread to rise. That is my hypothesis. Now, question pertaining to your Kitchen Aid mixer. I have seen 2 ladies on YT who had the same mixer as yours until the motor burned up /had a problem w/the sliced power cord. Upon research, I learned that the company highly recommended the mixers be serviced every 2 yrs. Have you experienced these problems w/ your mixer, or do have it regularly serviced?
My 12 yr old granddaughter is visiting this week and we just made this bread! My bil made bread all the time, and I remember all the kneading he did and how amazing the smell was! This is my first time making bread, same for my granddaughter. It was a great memory making time spent together!❤❤❤

If you keep your yeast in the freezer, it will keep for years. I get my yeast in bulk sometimes. If I keep it froze, always keeps for several years. I enjoy your channel so much. You explain everything so clearly & I like the way you show what ingredients go into what you are making. Ya’ll seem like such good people
@@cathylongstreth5405 I just get the jars & keep mine in the refrigerator but if I could get bulk I would freeze as well. I have found that it does affect the ability to proof/raise right if I don't let it warm up first.

I will measure out my yeast first and then put the rest of my yeast right back in the freezer, then I gather up the rest of my ingredients, by the time I get all of that done, my yeast is right at room temp and it's ready to go into your warm water with sugar.
@@cathylongstreth5405 you can use it frozen straight out of the freezer. The warm water (110-115 degrees F) will instantly thaw it. I bought a 3 lb bulk brick of yeast over 10 years ago and stored in it mason jars in my freezer. I am still scooping out of those jars and as of today (7-31-24) it’s still going strong.
I enjoy watching your videos so much. I’m 62 and never had a mixer like that only a hand mixer. I’ve always told myself it was a luxury I couldn’t afford and I always saw my mom and grandmother do everything by hand. So therefore I always felt that I should do it by hand too. You don’t need a stand mixer to make bread. I use a cheap hand mixer with a dough beater to make sourdough bread…..so easy… takes about 7 to 10 minutes to get the dough ready for the first rise.
My husband got me a stand mixer years ago. I was making whole wheat bread for our family every week (home ground wheat) and I developed carpal tunnel (not from making the bread, from other work I was doing), and it became too painful to knead the stiff dough by hand. He didn’t want to miss my bread, so he bought me the mixer. Now that I’m in my 60’s, the carpal tunnel was fixed ages ago but I’ve developed arthritis in my hands and it’s helpful once again. It is definitely heavy but I consider it weight training, for now. 😂
I'm your age and make mine by hand as well. With the arthritis in my hands I would love to have a mixer but isn't in the budget. I definitely feel the effects from kneading but only making it for myself means I don't do it often. It's worth it!
They're probably still expensive but Kitchen Aid does sell refurbished machines for less money. I only know because a commercial for them just popped up during this video so I don't know more than that. I was lucky enough to get one in the 90s (I happened to mention to my future husband...now ex-husband, as we went through a circular, that I had always wanted one & he bought me one that Christmas...I wasn't even hinting lol). They are great machines.
When you grabbed the Tupperware bowl & told how it was your Mom's it made me smile! I use the same bowl, I have one I bought but I also have another one that was my Grandma's. The white bread recipe I still make was the one Grams & Momma used. I've been making it since I had to stand on a chair & Momma stood behind me with her hands guiding mine, around 55 years or so. While we waited for the yeast to proof it was the time we went to make Momma & Daddy's bed. Talk about habit, for the first several years after I got married I would intentionally not make my bed right after getting up on bread making day so I could make it while the yeast proofed! I can't cook or bake the way I always have anymore, my legs just won't cooperate with my desire/habit. But thank the Lord, bread is one of things I can still do, thanks to being able to sit while it raises. I do agree that the smell of bread baking is mouth watering. The only thing that smells as good is when I bake hard salami. It bakes for 6 hours but after about 20 minutes my mouth is watering. It sure does make for a long day! @@cathylongstreth5405 I'd be happy to! It is a 3 day process but well worth the wait! It makes a great addition to holiday goodies and when wrapped tightly freezes well. My Aunt Barbara taught me how to make it, hence the name. Aunt Barbara’s Smoked Hard Salami 5 pounds hamburger 5 Tablespoons curing salt 1 ½ teaspoons liquid hickory smoke 2 ½ teaspoons garlic powder 2 ½ teaspoons mustard seed ½ teaspoon dried red pepper flakes 1 teaspoon black pepper Mix well in a large bowl, seal & refrigerate for 24 hours. Mix/knead thoroughly, seal & refrigerate another 24 hours. Mix again and divide into 3 even balls. Use waxed paper, parchment or foil and shape each ball into a log. As you work it into a log squeeze along the length to try to work any air pockets out. Once it feels even use your paper to roll into a round log. Repeat the process with the other 2 balls. Place on pan with rack, I use my broiler pan. Bake at 200 degrees for 6 hours, turning rolls after 3 hours. After cooling, store wrapped in foil in the refrigerator. DEB’S HINTS: I love to use venison for this but have to use at least 3 pounds of pork sausage to 2 pounds of the venison. Likewise, this is one time I do not use lean hamburger, it needs the fat to bake well. You always want to use disposable gloves to handle this. Not only is it impossible to get the liquid smoke to wash off your hands but any tiny little cut on your hand-Ouch! When you are working your rolls into logs it takes time to squeeze the rolls out. The more you do it the better feel you get for knowing there aren’t air pockets. In the end, it really makes no difference in the taste as all! When I was learning & found holes when slicing it, Aunt Barbara had the best solution…those were the pieces you had to eat so no one would see them! The way I gauge how long to make my rolls I eyeball the length of my pan. We often bought the little loaves of bread to make mini sandwiches, the Party Entertainers or Pepperidge Farms loaves. We always thought the pumpernickel/rye tasted great. Enjoy!!!
Your story of your Momma guiding your hands while teaching you to make bread reminded me of learning to cook with my Mama. She taught me to make cornbread when I was so small I couldn't lift the bowl to pour it into the skillet and she said "now, you can tell people you could make bread before you were big enough to pick up the bowl!" I've been making home made bread for years. I'm 77. My mother taught me and my grandmother taught my mother. We have a farmhouse bread recipe we all like to make. It is very much like your recipe. I sometimes make rolls instead of loaves or both. I actually have expanded my breadmaking with numerous other recipes. As you said, there's nothing like the aroma of bread baking. I love your videos and have tried numerous recipes from your kitchen. We love the chocolate chip oatmeal cookies!
I have 5 flours right now in my kitchen. I use bread flour in my chocolate chip cookies. Great recipe and they don’t get stale quickly like most other recipes.
I bought a large amount of yeast as soon as it was restocked during the pandemic. I still have one pound in the freezer-- I have wondered if it was still good. Should try some. Here in the country I've been told to pour yeast down the toilet that it helps the septic tank -- need to look that one up.

I keep my yeast in the freezer. So it’s still good after the expiration date. Also I leave some in the refrigerator and it’s still good passed the expiration date. Thank you for sharing. The Lord willing I’ll make some tomorrow.

Made this recipe today as we await a cat 5 hurricane. I halved it , as I decided to use my bread machine to mix and knead the dough. (arthritis) I then let it rise normally and bake in oven. It turned out amazingly. Thank you.

We were very poor; my mother made homemade bread regularly. We rarely had store bread except occassionally a loaf of pumpernickle from a Jewish small deli in our neighborhood. Us kids loved mom's white bread and would vie for the heel of warm bread. I would stay indoors once the bread went into the oven; my insight on beating out my brothers for the heel piece.

That was one of my most favorite things in the world when my mother would bake bread from scratch like that. The kitchen would smell so good and she also would slice some for us while it was still a little warm and OMG that was sooooo good!
I love bread. Growing up my Dad made it every now & then. It was always a treat. It took a very long time because of the raising. About 1 or 2:00 am, warm bread, smothered with butter... WONDERFUL memories. Thank you.

I have been baking bread for 40 plus years and I do not put sugar in my bread because I do not care for sweet tasting bread and I do not use any oil. I use lecithin instead of the oil which will give you a very nice chewy textured bread and I also only use fine kosher salt as it will not alter the taste of your bread. It is more accurate to weight your flour and not using cup measurements and you can never go exactly by what the recipe says when it comes to the amount of water to flour ratio because your flour hydration will depend on the weather, if it rains you will need less but if you live in the desert you will need more, it is all about how your dough feels in your hands which will be easy to gauge if you bake a lot of bread. I personally do not use a mixer because I have more control of how my dough feels when I knead by hand besides I enjoy it, I also knead the dough for 10 to 15 minutes to develop good gluten strands. You get the best loafs of bread by using a high protein flour like King Arthur Bread Flour which will make a big difference in how the bread turns out.

Hello! This past week I made your Amish White Bread recipe and it turned out great! I did decrease the sugar a bit to 1/2 cup. My conscience just wouldn’t let use the whole 2/3 cup called for in your recipe! Thanks for such a great recipe! I’m an avid hobby bread baker and love to try new recipes. I’ve been making bread probably for 40 plus years and don’t ever plan to stop! The bread hook was not doing it for me, so I changed to the regular mixing attachment. Oh my goodness back in the late 70s and early 80s I made homemade bread all the time. I made rye bread whole wheat bread sourdough bread add cheddar cheese bread. I would come home from school and have three or four different kinds of bread rising all at once so I could I could whip out the homemade bread. I'm going to have to get the ingredients for this Amish white bread and make that cuz boy I sure did love making bread back then. You can tell your mothers were great cooks. Thank you for sharing. I made bread in 1989, my first time. It was wheat bread for my boyfriend at his home. It was winter and I over did everything basically. That loaf turned into a masonry 🧱 brick! We nibbled on it what we could but I’m convinced that if we used it for a brick it would still be holding a house up today😂. Now I use a bread machine. Throw it in and it does everything. I do make bread on occasion especially sweet breads without the machine. I need to try your recipe. I love bread !
😂😂😂 In my early bread baking days I got my water too warm while proofing the yeast and killed it. I didn’t realize it, mixed it all up and ended up baking a brick as well!! We ate it anyway and it still tasted great but boy! was it dense!! The family still talks 25 years later about “the brick “! 😂😂 But once you’ve done that once, you never do it again!
I made this recipe for my Old Hun and myself! It was so delicious that I think he loves me the most he ever has in our 52 years together! The way to his heart apparently is through a soft , warm, slightly sweet, scrumptious loaf of your bread! Thank you!

So glad you're using King Arthur flour. Some people I see from the South swear by White Lily but here in Maryland and North swear by King Arthur😊. I'm assuming you can use a hand mixer if you don't have a Kitchen Aid. I've to the King Arthur plant and boy does it smell good. My nephew 's wife in Vermont buys 50 lbs at a time because makes the bread Pizza dough and etc.,. Lovr love melissa and you ,.best all around

My momma grew up in Dutch country in Pennsylvania. She used to make homemade bread all the time. She made potato bread before it was in the stores. This reminds me of home. Thank you, Tom & Melissa, for the precious memories. 💖
If you keep your yeast in the freezer, it will keep for years. I get my yeast in bulk sometimes. If I keep it froze, always keeps for several years. I enjoy your channel so much. You explain everything so clearly & I like the way you show what ingredients go into what you are making. Ya’ll seem like such good people

@@cathylongstreth5405 I just get the jars & keep mine in the refrigerator but if I could get bulk I would freeze as well. I have found that it does affect the ability to proof/raise right if I don't let it warm up first.
@@cathylongstreth5405 I keep my yeast in the freezer also. I will measure out my yeast first and then put the rest of my yeast right back in the freezer, then I gather up the rest of my ingredients, by the time I get all of that done, my yeast is right at room temp and it's ready to go into your warm water with sugar.
@@cathylongstreth5405 you can use it frozen straight out of the freezer. The warm water (110-115 degrees F) will instantly thaw it. I bought a 3 lb bulk brick of yeast over 10 years ago and stored in it mason jars in my freezer. I am still scooping out of those jars and as of today (7-31-24) it’s still going strong.
The utensil for mixing bread dough by hand is called a dough wisk or a bread wisk

I enjoy watching your videos so much. I’m 62 and never had a mixer like that only a hand mixer. I’ve always told myself it was a luxury I couldn’t afford and I always saw my mom and grandmother do everything by hand. So therefore I always felt that I should do it by hand too. I don't have a grand mixer like that either. I rather think putting it away would snap me.
You don’t need a stand mixer to make bread. I use a cheap hand mixer with a dough beater to make sourdough bread…..so easy… takes about 7 to 10 minutes to get the dough ready for the first rise.
My husband got me a stand mixer years ago. I was making whole wheat bread for our family every week (home ground wheat) and I developed carpal tunnel (not from making the bread, from other work I was doing), and it became too painful to knead the stiff dough by hand. He didn’t want to miss my bread, so he bought me the mixer. Now that I’m in my 60’s, the carpal tunnel was fixed ages ago but I’ve developed arthritis in my hands and it’s helpful once again. It is definitely heavy but I consider it weight training, for now. 😂
I'm your age and make mine by hand as well. With the arthritis in my hands I would love to have a mixer but isn't in the budget. I definitely feel the effects from kneading but only making it for myself means I don't do it often. It's worth it!
They're probably still expensive but Kitchen Aid does sell refurbished machines for less money. I only know because a commercial for them just popped up during this video so I don't know more than that. I was lucky enough to get one in the 90s (I happened to mention to my future husband...now ex-husband, as we went through a circular, that I had always wanted one & he bought me one that Christmas...I wasn't even hinting lol). They are great machines.
When you grabbed the Tupperware bowl & told how it was your Mom's it made me smile! I use the same bowl, I have one I bought but I also have another one that was my Grandma's. The white bread recipe I still make was the one Grams & Momma used. I've been making it since I had to stand on a chair & Momma stood behind me with her hands guiding mine, around 55 years or so. While we waited for the yeast to proof it was the time we went to make Momma & Daddy's bed. Talk about habit, for the first several years after I got married I would intentionally not make my bed right after getting up on bread making day so I could make it while the yeast proofed! I can't cook or bake the way I always have anymore, my legs just won't cooperate with my desire/habit. But thank the Lord, bread is one of things I can still do, thanks to being able to sit while it raises. I do agree that the smell of bread baking is mouth watering. The only thing that smells as good is when I bake hard salami. It bakes for 6 hours but after about 20 minutes my mouth is watering. It sure does make for a long day!

@@cathylongstreth5405 I'd be happy to! It is a 3 day process but well worth the wait! It makes a great addition to holiday goodies and when wrapped tightly freezes well. My Aunt Barbara taught me how to make it, hence the name.
Aunt Barbara’s Smoked Hard Salami
5 pounds hamburger
5 Tablespoons curing salt
1 ½ teaspoons liquid hickory smoke
2 ½ teaspoons garlic powder
2 ½ teaspoons mustard seed
½ teaspoon dried red pepper flakes
1 teaspoon black pepper
Mix well in a large bowl, seal & refrigerate for 24 hours.
Mix/knead thoroughly, seal & refrigerate another 24 hours.
Mix again and divide into 3 even balls. Use waxed paper, parchment or foil and shape each ball into a log. As you work it into a log squeeze along the length to try to work any air pockets out. Once it feels even use your paper to roll into a round log.
Repeat the process with the other 2 balls.
Place on pan with rack, I use my broiler pan.
Bake at 200 degrees for 6 hours, turning rolls after 3 hours.
After cooling, store wrapped in foil in the refrigerator.
DEB’S HINTS:
I love to use venison for this but have to use at least 3 pounds of pork sausage to 2 pounds of the venison. Likewise, this is one time I do not use lean hamburger, it needs the fat to bake well.
You always want to use disposable gloves to handle this. Not only is it impossible to get the liquid smoke to wash off your hands but any tiny little cut on your hand-Ouch!
When you are working your rolls into logs it takes time to squeeze the rolls out. The more you do it the better feel you get for knowing there aren’t air pockets. In the end, it really makes no difference in the taste as all! When I was learning & found holes when slicing it, Aunt Barbara had the best solution…those were the pieces you had to eat so no one would see them! The way I gauge how long to make my rolls I eyeball the length of my pan. We often bought the little loaves of bread to make mini sandwiches, the Party Entertainers or Pepperidge Farms loaves. We always thought the pumpernickel/rye tasted great.

Your story of your Momma guiding your hands while teaching you to make bread reminded me of learning to cook with my Mama. She taught me to make cornbread when I was so small I couldn't lift the bowl to pour it into the skillet and she said "now, you can tell people you could make bread before you were big enough to pick up the bowl!" I've been making home made bread for years. I'm 77. My mother taught me and my grandmother taught my mother. We have a farmhouse bread recipe we all like to make. It is very much like your recipe. I sometimes make rolls instead of loaves or both. I actually have expanded my breadmaking with numerous other recipes. As you said, there's nothing like the aroma of bread baking. I love your videos and have tried numerous recipes from your kitchen. We love the chocolate chip oatmeal cookies!

I buy my yeast from Costco or Sam’s, big bag keep in the freezer it won’t go bad that way. I use bread flour too King Arthur always. ❤
I have 5 flours right now in my kitchen. I use bread flour in my chocolate chip cookies. Great recipe and they don’t get stale quickly like most other recipes.
I bought a large amount of yeast as soon as it was restocked during the pandemic. I still have one pound in the freezer-- I have wondered if it was still good. Should try some. Here in the country I've been told to pour yeast down the toilet that it helps the septic tank -- need to look that one up.
I get mine from King Arthur, comes in a brick size that I empty into a container then place it in the freezer.
It can go bad if the expiration date is past. I had a friend that this happened to. If the ex date is close or past be sure to proof first.

This is the standard bread recipe that all Amish women in Lancaster County, Pa.use and often add their own touches. The taste and texture are similar across the board. Non Amish locals buy it from them and love it. Gut Esse!

Made this recipe today as we await a cat 5 hurricane. I halved it , as I decided to use my bread machine to mix and knead the dough. (arthritis) I then let it rise normally and bake in oven. It turned out amazingly. Thank you.

We were very poor; my mother made homemade bread regularly. We rarely had store bread except occassionally a loaf of pumpernickle from a Jewish small deli in our neighborhood. Us kids loved mom's white bread and would vie for the heel of warm bread. I would stay indoors once the bread went into the oven; my insight on beating out my brothers for the heel piece.

That was one of my most favorite things in the world when my mother would bake bread from scratch like that. The kitchen would smell so good and she also would slice some for us while it was still a little warm and OMG that was sooooo good!

I have been baking bread for 40 plus years and I do not put sugar in my bread because I do not care for sweet tasting bread and I do not use any oil. I use lecithin instead of the oil which will give you a very nice chewy textured bread and I also only use fine kosher salt as it will not alter the taste of your bread. It is more accurate to weight your flour and not using cup measurements and you can never go exactly by what the recipe says when it comes to the amount of water to flour ratio because your flour hydration will depend on the weather, if it rains you will need less but if you live in the desert you will need more, it is all about how your dough feels in your hands which will be easy to gauge if you bake a lot of bread. I personally do not use a mixer because I have more control of how my dough feels when I knead by hand besides I enjoy it, I also knead the dough for 10 to 15 minutes to develop good gluten strands. You get the best loafs of bread by using a high protein flour like King Arthur Bread Flour which will make a big difference in how the bread turns out.

Hello! This past week I made your Amish White Bread recipe and it turned out great! I did decrease the sugar a bit to 1/2 cup. My conscience just wouldn’t let use the whole 2/3 cup called for in your recipe!
Thanks for such a great recipe! I’m an avid hobby bread baker and love to try new recipes. I’ve been making bread probably for 40 plus years and don’t ever plan to stop! The bread hook was not doing it for me, so I changed to the regular mixing attachment. That was another change I made in the recipe. All the best to you, your family and your TH-cam channel. Oh my goodness back in the late 70s and early 80s I made homemade bread all the time. I made rye bread whole wheat bread sourdough bread add cheddar cheese bread. I would come home from school and have three or four different kinds of bread rising all at once so I could I could whip out the homemade bread. I'm going to have to get the ingredients for this Amish white bread and make that cuz boy I sure did love making bread back then. You can tell your mothers were great cooks. Thank you for sharing. I made bread in 1989, my first time. It was wheat bread for my boyfriend at his home. It was winter and I over did everything basically. That loaf turned into a masonry 🧱 brick! We nibbled on it what we could but I’m convinced that if we used it for a brick it would still be holding a house up today😂. Now I use a bread machine. Throw it in and it does everything. I do make bread on occasion especially sweet breads without the machine. I need to try your recipe. I love bread !
😂😂😂 In my early bread baking days I got my water too warm while proofing the yeast and killed it. I didn’t realize it, mixed it all up and ended up baking a brick as well!! We ate it anyway and it still tasted great but boy! was it dense!! The family still talks 25 years later about “the brick “! 😂😂 But once you’ve done that once, you never do it again!

So glad you're using King Arthur flour. Some people I see from the South swear by White Lily but here in Maryland and North swear by King Arthur😊. I'm assuming you can use a hand mixer if you don't have a Kitchen Aid. I've to the King Arthur plant and boy does it smell good. My nephew 's wife in Vermont buys 50 lbs at a time because makes the bread Pizza dough and etc.,.

When I was a kid my mom used to make homemade bread and it looks very similar to what she made. She also would use that same dough to make nice big dinner rolls😊
