    Made this tonight. OMG it was delicious. I was making this for a dinner party so I cooked everything ahead of time except adding the red and green peppers and julienned carrots. When I was ready, I added the peppers and carrots, heated it up and then added the fish sauce and brown sugar. The vegetables weren’t over cooked and the meal was delicious. Everyone loved it. This recipe is definitely a repeater and keeper.

      I just made some. And I had a huge bag of thighs and drums that I just wanted to get rid of. It took so long for me to get that raw meat off 😭. Not the thrillest touching it, & continuously cleaning everything around. Bc I felt like just smelling it was gonna make me sick. But cutting ginger, garlic, & peppers made it so much more longer of a process. I just kind of winged it. Had it on high, then turned low, while cutting everything up. & It turned out so good. My munchkins doing a I'm eating yummy food & it makes me happy dance. Doing half way floor angels. Also, I put fish sauce in there as well. I figured I wouldn't taste it. & I think I bought cilantro for no real reason at all

    What a successful meal I made from a package of costco chicken thighs. I didn't have the cilantro [coriander] leaves or the thai chili peppers-so i used some of my garden fennel leaves. Was scared to use expired fish sauce so used your suggestion of Tamari sauce .... not as expired...lol. Thank you for recipe and all the helpful comments here.

Coconut milk adds richness and a distinctive creamy, mildly sweet taste that’s essential to the authenticity of Thai curries. Regular milk is much thinner and doesn't have that signature coconut flavor, so the curry may end up less rich and less flavorful. If you don't have coconut milk, you could try using a combination of regular milk and a little cream to add richness, but the result will still be quite different from the traditional version.
      Another option is to use a plant-based milk (like almond milk) with some added coconut extract to mimic the flavor of coconut milk.

      Red Curry Paste Alternative / Homemade
      2 tablespoons chili powder (preferably mild or medium)
      1 tablespoon paprika (for color)
      1 teaspoon ground cumin
      1 teaspoon ground coriander
      1 teaspoon garlic powder or 1 clove of minced garlic
      1 teaspoon ginger powder or 1 inch of fresh ginger, minced
      1 tablespoon soy sauce or fish sauce (for umami)
      1 teaspoon lemongrass paste or zest of 1 lime (optional for extra flavor)
      1 teaspoon onion powder or 1 small shallot, minced

I know.. and neither do they cook fresh, wild caught fish... or fresh organic produce... or anything of actual quality... people consider panda express chinese and taco bell to be mexican... i wouldnt expect 99% of the population to actually know what real food is when going out to a thai express joint.. but if you're gonna put out a recipe video so people can hook themselves up with the best quality food possible, at least make the ingredients different than the same highly processed trash they use in fast food joints... that's what's crazy to me.. but to each their own.
