    I’m duplicating every one of these methods! My first year growing zucchini and I had no idea other than zucchini bread. I really appreciate this video Ms Annie and all you do at Heartway Farms.

    I too make a lot of loaves for the freezer - my recipe does 4 at a time - any combo you want but my favorite is cranberry walnut and bananna cherry coconut. I fermented some into dill spears and made a batch of Jardiniere. If you let them grow big, they actually store well much like winter squash although maybe not as long. I like it as zucchini marmelade but my favorite use is in dainties, cookies and cakes I bake in the fall for the freezer. Good video Annie. Your relish looks good...which reminds me I need to get mine done and also throw zucchini in the dehydrator (for chips and adding to cooked goods).

      Awesome ideas! Different topic... I just made peach peel jelly and it is so good. I merged several different recipes and I'm super happy with how it turned out. So happy that I'm making another batch. ☺️

    I have been making zucchini relish for over 45 years now. Back then it was something that people in the south hadnt really heard of much and I havent bought relish for as long . I use it in alot of things. A few years ago I canned shredded zucchini in pineapple juice and have been using that in my zucchini bread and other baking! I will have to try your recipe for that Thanks!

    I will using my professional food sealer- we invested in one during covid- best money we ever spent- it wasn't cheap but we have saved a fortune on bulk veggies and meat- we are also a farm but we grow hay and just have a large garden and egg hens for personal use

      I found zucchini had too much moisture for the food saver😵‍💫. Ended up in ziplock bags

      @@debbiesheets5585 I very lightly salt and place in a strainer with a weight- helps with all the extra moisture- so far I haven't had a problem

    I add zucchini to a pot of my steel cut oats. I also cut them in half, spoon out the seeds, add leftovers and bake. I call them zucchini boats. You can make zucchini pickles. My favorite is zucchini bread (plain, chocolate and lemon) and muffins. I have a freezer full. Happy harvesting.

    Actually I make a curried zucchini soup. I found the recipe in the Everyday Food magazine. It’s delicious simple and quick!

    I shred zucchini and then dehydrate it so that it doesn't take up so much room in the freezer. I also make zucchini chips with just salt and pepper. We eat them as is or I use them to make lasagna - use the chips instead of noodles and make the sauce a bit more runny since the chips will soak up the liquid - very good.

    In the UK, giant zucchini are called marrow. People cut the end off, scrape out the spongy middle, stuff it with z minced meat mix and bake.

    I can’t wait till fall to make Zucchini Pie. Savory dish with provolone and Parmesan cheese .. easy to find the recipe on Pinterest. Thanks for the ideas. I didn’t have a bunch of squash this year but there is always the farmers market. I’ve noticed when it gets later fall and some of the squash has over grown they sell it pretty cheap.

    Is it safe to be using corn starch as a thickener??I thought it was not recommended but to us clear Jel?

      That is true that the USDA does not recommend using cornstarch anymore due to inconsistent heat distribution through the thicken product. However, that is more for things like pie fillings and such - things where the product must cook and the heat must go through the entire jar. In the relish, you are simply warming it in the 15 minute cook time and therefore not as crucial. In addition, the vinegar is pickling the zucchini to add to the safety. But you can certainly use clear jel if you wanted.

    I made the zucchini bread recipe last night and added chocolate chips instead of raisins. That is the best zucchini bread I've ever tasted! My family loved it for breakfast this morning. The flavor of the spices combined with the chocolate was so delicious! Thank you for sharing all the recipes. Next recipe I want to try is your sourdough bagels.

    Yummy. Last summer we discovered zucchini butter and being a low dairy family, it's been fantastic added to pizza with or without tomato based pizza sauces. It's super creamy and we freeze it in about cup portions ,so one defrosted is perfect for pizza night . It's also delicious spread on sourdough toasted with a little grated cheese for those who tolerate it. Im eking out the last few bags until zucchinis come in again. Haha.     Perfect timing on this video - I just put up sliced zucchini and shredded zucchini today, and was looking for a good zucchini bread recipe to use later in the fall. It's 90 degrees here today, and I am not turning on the oven for anything!

    Have you guys ever done a garden tour during August or first part of September to see your harvesting and what did good in your area this year. I watch gardeners from different parts of the country and see what's been growing good and not. I'm just curious how your guys garment did. Thank you for your content. It's very informative.

    You forgot zucchini boats! My favorite!
    I like to add shredded or diced zucchini to LITERALLY everything. In my scrambled eggs, casseroles, sloppy joes, spaghetti, lasagna, quiche, fajitas, soup, stew, rice, it takes on the flavors of most dishes and you don’t even notice.

    I’m Sicilian and we also use zucchini in the morning cooked with eggs! Slice a smaller zucchini into discs and sauté them in some butter in a skillet. While they’re cooking crack some eggs into a bowl and beat them with a fork until they’re broken up well. The amount of eggs will depend on the amount of zucchini you used. There’s no set amount you use. We like a lot of zucchini to egg ratio but you might like more egg. Once the zucchini has started to brown pour the eggs into the the zucchini and start stirring and combine them same as scrambled eggs. Add salt and pepper to taste and when the eggs are soft and cooked fluffy with the zucchini it’s time to eat!! It’s delicious!! Enjoy 😊

    Dredge it in egg then flour or cornmeal, flash freeze, bag up for fried zucchini during the winter.

    Great ideas! Can you clarify, I was told that corn starch isn’t food safe to can with so I bought something called
    Clear Jel for pie fillings. Is corn starch safe to use in your zucchini recipe?

      I have never had an issue when it comes to safety (or shelf life) with this particular recipe.

    We use some frozen zucchini for stir fry. Better to thaw them and add at the end with the sauce since it will be soft. Tonight is marinated zucchini on the grill. The marinade is just some Italian dressing

    As a nurse, I was always taught to NEVER use a sharpie on anything plastic, as the sharpie will leach into the plastic, especially IV bags and tubing, yeah, the thick tubing, too. So, I never write on my bags. Instead, I write on the actual zipper part, which is not next to any food. Just a tip.

      We use it as a garnish for hot dogs and hamburgers. Really anything that you use is relish for you can use this for :-)
