We love spending time in the kitchen now to try new autumnal recipes and light a fire in our snug and watch a lovely film or series. We hope you enjoy this cosy and peaceful vlog. RECIPE ALMOND & POTATOE PUDDING:
INGREDIENTS
170 g/6 oz/1⁄2 cup cooked mashed potato
115 g/4 oz/generous 1 cup ground almonds
285 ml/1⁄2 pt/11⁄4 cups milk
Finely grated zest and juice of 1 lemon
115 g/4 oz/1⁄2 cup butter, plus extra for the mould
Pinch of ground nutmeg 5 eggs, separated
1⁄4 tsp cream of tartar or squeeze of lemon juice (optional)
Salt
Chopped almonds, to decorate lemon slices, to serve (optional)
METHOD
If you do not have any cold mashed potato to hand, start by peeling, dicing and mashing some potatoes and allowing them to cool.
Put the ground almonds in a saucepan with the milk, lemon zest and juice, and butter. Warm until the butter is melted and the milk is blood-warm, and mix well. Remove from the heat and stir in the mash. Add the nutmeg and a good pinch of salt, together with the egg yolks. Mix well and set aside. Preheat the oven to 180°C/350°F.
Whisk the egg whites to stiff peaks (the cream of tartar or a squeeze of lemon juice will help). Fold the eggs gently into the potato mix.
Butter an 850 ml/11⁄2 pt/31⁄2 cups mould or 900 g/2 lb loaf tin and pour in the mixture. Give it a couple of gentle taps to settle it.
Bake in the oven for 1 hour until light brown and set through. Invert onto a wire cooling rack, demould, decorate the top with chopped almonds and serve hot, surrounded by lemon slices (optional).
You can also leave it to cool in the mould for 1 hour before turning it out, slicing it, sprinkling it with a little flour and frying it in a little butter.

Joerg was quiet in the beginning of your blogs. Now y’all compliment each other so well. The recipes look delicious. As always enjoyed watching. Sunday afternoon at home are the best.
A tip for baking blind, is leave the pastry hanging over the sides and add a round of parchment paper with some dried beans onto to hold the pastry down. Cut pastry after first initial cooking. Loved the video, hope the car is better 🙂
Chilling the pastry in the form also helps for it to hold its shape better.

When parbaking pastry, using some parchment paper with pie weights or dried beans works nicely to help avoid shrinking.

As with all your videos, I just loved this one! The love, the appreciation of simple things, the pudding and lovely vegetable tart and your beautiful home (I almost forgot Frank Sinatra's 'Witchcraft" playing in the background!) gave off cozy vibes for sure. My late husband and I loved to cook together, especially around this time of year and in winter. We used to make spicy Texas chilis, beef Stroganoff and Hungarian one-pot dishes that would warm us up in frosty weather. We listened to vintage music on the stereo while we chopped and stirred. So you also brought back some very sweet memories. 🥰

How did you get the potato/almond pudding to release so easily from the mold..?? It fairly, JUMPED out..! Mine usually come out the way the second one did..! Did you spray the tin..? My husband was a wizard at greasing a tin like that. His specialty was a lemon pudding in a Bundt pan. But, sadly, he is no longer with us. 😢 But that doesn’t mean I can’t try..! ❤️👍🏻 Keep up the good work..!
Oh we never use spray! The 'goldy' mold is from a brand called NordicWare (I think it's American) and it's absolutely amazing, we just use it with a bit of butter and it never fails. We're sending you much love Mia.xxo
