Do you have an opinion on which part of the lemon to use? I see she is using the zest here for the pie but I thought it needed the juice to work with the blueberries to make a jelly, does just the lemon zest work the same?

Made this last night using allrecipe's "French Pastry Pie Crust" recipe (because it had already been tested by me previously to be awesome) & I had excellent results! Tasted and looked perfect! I just wanted to share my baking experience with you guys because I used a few substitutes for things I didn't have, so wanted to help anyone else who might not have everything in the recipe. 1. Heavy Cream - I used whole milk instead & it turned out fine. Don't go buy a carton of cream if you don't already keep it on hand just so you can use a tablespoon of it! 2. Lemon Zest.- Couldn't use Lemon Zest, (my lemons were too soft to zest with my crappy zester) but an equal quantity of Orange Zest worked perfectly fine for me. 3. Ground allspice - Didn't have on hand, so used an equal quantity of Ground Ginger instead. 4. Kosher Salt - Used equal quantity of regular Table Salt 5. Blueberries- It says in the recipe 2 pounds equals about 6 cups of blueberries, but I had only 3 full dry pints of blueberries that only equaled about 4 and 3/4 a cups of blueberries, and it filled up a large pie pan just fine to me. Infact, if I had enough to measure out the full 6 cups, the pie wouldn't have looked as good because the blueberry juices would have bubbled out all over more of the lattice crust. 6. Garnish Sugar -/ I'm pretty sure regular sugar would do the same job course sugar would. I didn't add it, however, because having a significantly smaller amount of blueberries than the recipe called for, but yet already mixing up the same amount of sugar the recipe called for, I figured it could already turn out too sweet & didn't need any further sugar. Anyway, thanks to the maker of this video/site for a great recipe. Glad it turned out great even when I just used what I had on hand.

I hate , well, maybe that is a little harsh ! I dislike the flavor of blueberries ! Someone gave me a big batch of berries and I did not want to throw them away,so I tried this recipe . So if it turned out bad ,no big loss right !.....O M G.....I ATE ALL OF IT ! Now I need to find more berries on sale ! Thanks ,IT WAS WONDERFUL!
When the time comes for me to make the pie, I'm picking my own blueberries and make the filling with maple sugar, honey, 5 spice, salt, lemon juice and tapioca flour in advance, as well as decorating a pie crust so it's ready for the next day. Before baking the pie , I'd make a toffee pecan streusal and finish it off with a braided pie crust shaped into a heart. I may come off sounding like a persnickety blowhard, but I like making pies in mid summer to the holiday season.

Hey there thanks for this great recipe! Is it possible to prepare it the night before and complete the recipe up until the point of just before the oven baking, and then bake it the following evening? Would it still taste ok? Not very expert in baking pies yet! Thanks!
