    I've never thought of using oil, soy sauce, and water to make a broth to simmer something in. I'm gonna try that:)

      Eggplant and oil go well together, making it delicious. The key is to cook it down well. By cooking it down, the flavor soaks into the inside of the eggplant and it becomes delicious.

    That looks like a really nice meal, thank you for sharing. In Switzerland, we have ready made Teriyaki, in bottles like soy sauce. Would it be okay to use that, instead of making the sauce myself ? Or would the dish change completely ?

      The teriyaki was very good. I don't know what ingredients the teriyaki sauce sold in jars is made from, but I think you can make a similar dish with it.
      Generally, such sauces tend to be sweet (lots of sugar), so if you have soy sauce at home, I would suggest using teriyaki sauce and soy sauce together. However, to avoid it becoming too salty, use less teriyaki sauce and add more soy sauce to make up for it.
