    That soup looks really good, I will definitely give it a try. I love soups in colder times. Today, I will make minestrone soup: cook different vegetables like carrots, green beans or kidney beans, mushroom, cabbage, onion, selery etc. in a broth. Add a bit of tomato paste and sage. I a separate pan, cook small pasta. Serve with fresh basil (or if not in season, use a table spoon of basil pesto) and grated parmesan cheese. And mix in den cooked small pasta in your bowl with a part of the cooked veggies and broth.

    This dinner looks really tasty. I would cook the cabbage, because my stomach doesnt handle raw cabbage well 😉. And I would have to choose another fish, as we dont have this one in Switzerland. But otherwise, its perfect.

      You are right, it really depends on the country concerning fish and seafood. For example, Switzerland is a landlocked country (and Japan is one of the biggest island nations of the world), so its totally different. We of course can also buy some saltwater fish/seafood here, but normally I prefer to buy freshwater fish. And indulge in seafood water fish/seafood, when I am in places like Japan or Thailand.

    One question about the cooking sake: is this the same like normal drinking sake, just poor quality ? In Switzerland, we have cooking wine (white and red). Its the same as normal white or red grape wine, but its just poor quality, that you would never drink. But as a kind of condiment or a part of a sauce, its perfect and much cheaper as "drinking wine".

      Thank you for your question. The cooking sake we use in our videos is either inexpensive sake for drinking or inexpensive sake sold for cooking. If you look for cooking sake in Japanese supermarkets, you will find two main types. One is cooking sake with added salt and umami seasoning, and the other is the kind we use, which can also be drunk. Many Japanese households may be using cooking sake with added salt. It is convenient to use for seasoning. However, many restaurants and homes that are particular about their food use cooking sake that does not contain salt. Because they want to adjust the amount of sake and the amount of salt themselves.

    Ribs is nothing that I like, but I often do omelette like you did. I use what ever vegetable I have (spring onion, green pepper, tomato, mushrooms etc.), fresh herb like parsley, maybe some fresh chili, sometimes also cheese (swiss hard cheese like gruyere). For me, this is a main meal, maybe together with a salad.

    Can I ask a totally non food related question ? I have noticed that in Japanese, it seems that "San" is added after a male name, in a way of showing respect. So you are Sho-San. Is the female form of that "Sanna" ?

      Even questions not related to food are welcome. You are right, in Japan we add “san” after the name. This is common for both men and women. There are few divisions in Japanese such as masculine or feminine forms. As an exception, boys often add “kun” after their names and girls often add “chan” after their names. Recently, however, some people call their children by “san” from childhood, without distinction between male and female. Another more respectful way to address a person is to add “sama” after his or her name, which is often used on formal occasions. (In English, it would be the equivalent of “Mr.” or “ Ms.”) But I know that in English we call people by their first name without any honorific title after it, and I don't feel at all uncomfortable with just their first name (in fact, I am happy to be called that in a friendly way), so you can continue to call me Sho. Please call me whatever you like.

      I think when I am in Japan next March, I will buy a square pan to prepare tamagoyaki in it, because in a normal round pan, it just doesnt work.

      Thank you! The key is to make sure that when you scrape off the corn kernels, you don't scrape the hard part near the core together. If you cook the hard part with the rice, it will remain in your mouth when you eat it and you won't be able to fully enjoy it.

    Hi Sho, that summer pasta looks tasty. And the good thing is, you can use all kind of ingredients, depending on what you like, what you have in the fridge etc. I very much like octopus, put its impossible to the it in Switzerland just as a small piece. You have to buy a whole octopus, and prepare / cook it yourself, and that will be very expensive. So instead, I could use tinned tuna or surimi (fake crab meat sticks). P.S. out of curiousity: how warm does it get in summer in Hokkaido ? Here the last week, it was very warm (around 30 degrees in the shade) and we have almost no offices etc. with air-conditioning

      Hello, thank you again for your comments. I am glad you like octopus, as I hear it is not a very popular food overseas. In Japan, octopus is a very popular ingredient, so you can find boiled octopus or raw octopus for sashimi at supermarkets for about 100g. Summers in Hokkaido are short, but hot days can reach around 33℃-35℃. Unlike Tokyo and Osaka, the humidity is low, so it is comfortable, but it is hot enough in the sun. The temperatures around Sapporo are about that high, but Hokkaido is a large place, so there are towns called Kushiro and Wakkanai, and those towns are cool enough not to exceed 25°C even in summer.

    Hopefully, one day you will be able to visit Italy, and see those places in real. And maybe also go to Paris, to enjoy the waterlilies paintings from Monet. I am very lucky, as I live in Switzerland, and both Italy and France are so close, so I have been there many times.

      @@Japanese_homecooking_sho I know that taking a vacation which is longer than 1 week is almost impossible for many Japanese, and that makes travelling abroad (especially to countries far away) really difficult. I am very lucky that I can take up to 8 weeks per year, and leave for 4 weeks at a time.

    Hi Sho, I like to cook a vegetarian version of this, which I learnt in Pakistan. For that, I mix onion, garlic, ginger and tomato into a paste and than start to fry it in a pan. I might at this point add some small cut veggies, or only precooked lentils or chickpeas. For spices, I get different spices from one of the indian subcontinent shops we have in the big cities in Switzerland. Garam masala (mixed spices), channa masala (mixed spices for chickpeas), turmeric powder (for the color mostly), and ground dry coriander. Also some salt. I like it spicy, so I will also add chili (dried or from the freezer). And I will garnish the curry with fresh coriander. If its chickpeas, you can also serve a hard boiled egg with it (apart from rice). As a cooling agent, I will prepare raita, which is basically grated cucumber mixed with plain jogurt, a bit of salt and a bit of ground coriander. Very tasty :-) and it gives me good memories of Lahore, Pakistan.

I guess it is similar to the yogurt-based drink called lassi, which is a sweet drink served after a meal in Japanese curry restaurants.

      @@Japanese_homecooking_sho Raita is not the same as Lassi. Raita is like a sauce, not a drink, its often served in Indian and Pakistan cuisine with spicy food. The classic version is made with cucumber, you could also do it with tomatoes, peppers, or a mix. You can compare it to Tzatziki from Greek cuisine. The drink Lassi can be sweet or salty. Personally, I like salty Lassi (as I dont really like sweet things).

      @@swissfoodie3542 We'll be visiting Tokyo, Yokohama, and Nagoya. And it's hard to pick what I want to try the most, but I really want to try mazemen or tsukemen, and just different types of miso, like barley miso, that's hard for me to find where I live in the US.

    A non related question, as you live in Hokkaido: I would like to travel there in the next 2-3 years (next year, we will travel to Tohoku). Is it okay to visit Hokkaido using public transport ? We dont mind taking a taxi sometimes, but dont want to be totally limited if we dont self-drive. Also, what would be a good month to visit ? We dont want to have snow, and not to visit in the very touristy high season. Is May good ? Thanks a lot for your advice, that would be really appreciated.

      Hokkaido also has a public transportation system, but it is not as developed as in Tokyo. However, public transportation is sufficient for travel in urban areas and tourist destinations such as Sapporo and Hakodate. While trains and buses are available for travel between cities, there are many tourist destinations that can only be reached by car. Depending on the places you wish to visit, you may be able to find out the train schedule in advance (some sections have very few trains per day) and travel according to that schedule, taking a cab only when necessary. May is a good month to travel, as you mentioned. However, early May is a major holiday in Japan called Golden Week, so if you are going to travel in May, I would recommend after the 10th. Also, September or October would be good. It is recommended because the summer vacation season is over and before the snow falls, and you can enjoy the autumn foliage, etc. But please note that even in October, it is already snowing in the higher elevations and it gets very cold in the mornings and evenings. If you have any additional questions about Hokkaido or Tohoku, please feel free to comment anytime. We hope your trip to Japan will be a wonderful one.

    Hi Sho, I realise that at home, I never cook meat. And in the restaurant, if I can choose fish/seafood/vegetarian, I will go for it. But when I am travelling, I dont want to limit myself, and I love things like Shabu Shabu and Sukiyaki when in Japan. Today, its very warm, so I have prepared a panzanella salad, and its in the fridge and will be ready soon. For that, cut slighty old bread (not toast, proper bread like baguette or ciabatta) into small pieces. Add tomatoes cut into small pieces, fresh basil, and if you want finely cut red onion, garlic and finely cut red pepper. Put plenty of salt, black pepper, red wine vinegar and olive oil over it and mix it well. Keep it in the fridge for 3-5 hours, untill the bread has soaked up the juice of the tomatoes and everything is very chilled.

    A nice and interesting recipe. I love shrimp, but mixing them with eggs would have never come into my mind. Is that a Japanese recipe or a recipe that you have created ?       Sorry we didn't notice this comment until now, too! The combination of shrimp and egg is often found in Japanese Chinese restaurants. So I am not sure if it is actually eaten in China, but it is a rather popular combination in Japan.

    It seems that you got a tasty and varied dinner, with ingredients from the fridge and basic sauces and spices. I often cook "what is left in the fridge", not because I cant go shopping, but because I want to use up ingredients that might otherwise "go off". Tonight it will like that. Simple and tasty. A corn on the cob, that I first boil in salted water, and then grill with olive oil, spices and at the end a knob of butter in a pan. And a salad of cherry tomatoes, feta cheese, greek olives and fresh basil, with olive oil, lemon juice, pepper and salt.

    Thank you Sho for another good video. Is the fried tofu crispy after being toasted ? In Switzerland, most people eat roastbeef in a restaurant. Its normally served with french fries and sauce tartare. Sauce tartare is mayonnaise, mixed with finely chopped pickled gherkins, onion, capers, parsley and salt and pepper.

      Thank you again for your comments. When fried tofu is baked, it becomes crispy and crunchy, but be careful, as it burns quickly. Roast beef is often seen at hotel buffets in Japan too. On this day, I found a good deal at the supermarket on meat that looked good for roast beef, so I made it. The sauce you gave me sounds delicious too!

      Thank you again for your comments. Pork belly has a lot of fat, so I actually get an upset stomach if I eat a lot of it. Thanks for enjoying my cabbage miso soup. Since the only ingredient is cabbage, the key is to add more cabbage to bring out the vegetable broth.

    I really enjoy your show as you keep it simple and I can understand how you organize everything. And thank you to the gentleman who helped out with a list of the basic products to have on hand for cooking. It really helped me out. Totally enjoy pork belly, my freezer has a lot available. Do you know anything about how to make pork belly "burnt" ends? It appears to be increasing in popularity where I am. If you make it could you possibly do it on a show?       I totally agree - I also like this channel, as the dishes are simple to prepare and dont need 1000 different things ;-). Also, its relaxing to watch, with good instructions, and nice ideas for side dishes (I especially like the soups). Sometimes, getting some ingreditiens (vegetables, mushrooms, a special kind of ginger, shiso leaves) is not possible in Switzerland. But I can usually find something similar.
