    Hi Sho, I like to cook a vegetarian version of this, which I learnt in Pakistan. For that, I mix onion, garlic, ginger and tomato into a paste and than start to fry it in a pan. I might at this point add some small cut veggies, or only precooked lentils or chickpeas. For spices, I get different spices from one of the indian subcontinent shops we have in the big cities in Switzerland. Garam masala (mixed spices), channa masala (mixed spices for chickpeas), turmeric powder (for the color mostly), and ground dry coriander. Also some salt. I like it spicy, so I will also add chili (dried or from the freezer). And I will garnish the curry with fresh coriander. If its chickpeas, you can also serve a hard boiled egg with it (apart from rice). As a cooling agent, I will prepare raita, which is basically grated cucumber mixed with plain jogurt, a bit of salt and a bit of ground coriander. Very tasty :-) and it gives me good memories of Lahore, Pakistan.

      I see that you have been to Pakistan as well. I have never heard of a drink called raita before. I guess it is similar to the yogurt-based drink called lassi, which is a sweet drink served after a meal in Japanese curry restaurants.

      @@Japanese_homecooking_sho Raita is not the same as Lassi. Raita is like a sauce, not a drink, its often served in Indian and Pakistan cuisine with spicy food. The classic version is made with cucumber, you could also do it with tomatoes, peppers, or a mix. You can compare it to Tzatziki from Greek cuisine.
      The drink Lassi can be sweet or salty. Personally, I like salty Lassi (as I dont really like sweet things).

    I get to visit Japan for the first time next month, and there's so much food I want to try out. Everything you make looks so good!

      I am curious, where are you planning to visit in Japan ? Are there any particular dishes that you look forward to try ? I was first in Japan in 2017, and since then, I am really "in love" with Japan, and I cant wait to be back there for the 4th time in March 2025.

      @@swissfoodie3542 We'll be visiting Tokyo, Yokohama, and Nagoya. And it's hard to pick what I want to try the most, but I really want to try mazemen or tsukemen, and just different types of miso, like barley miso, that's hard for me to find where I live in the US.
