Smash burgers are always a good idea. A tip on those bad boys, not sure if you can zone your heat but smash burgers are high heat, low time. You want to smash, flip, cheese. The one thing you don't want to do which i see you doing to a few is smashing, leaving the smash plate on the burger, flipping and pressing which is taking all that delicious fat out of the burger. Smash burgers get their juiciness from the high heat method in which by the time you flip, the fat is just starting to emulsify which is when you put the cheese on. They will always be well done but juicy (for safety regs). Rule of thumb is your first (and only) flip should have that darker crust (maillard perfection) and you know you're good. Keep up the awesome content champion!

That makes zero sense on those grills is the spit trays. It’s really not satisfying having to scrape it down that thin channel and into a tiny mouth to dump it. The whole recess should be open so you can just scrape it away right away.
I like to get rid of the oil released from the chorizo once i no longer need it so it doesnt burn and stick, makes it so i dont have to scrape as much of it off 😅. Those are some good looking burgers though so i wouldnt mind either way.

Then some lady came along and wanted her meat burger on the damn veg side because she didn’t want the chorizo juice near her burger? Come on lady, your burger would have been fine up in the corner instead of ruining it for vegetarians everywhere who otherwise would have been able to eat safe. Sheesh. You actually _do_ want the meat to stick. That's how you get a smash crust. All smashes should require a good scraping to get off the griddle.
