Lemon Meringue Tart (vegan) ☆ レモンメレンゲタルトの作り方

    Ingredients:
    For the crust:
    170g pastry flour
    50g maple syrup
    50g oil
    For the filling:
    200g soy milk
    40g maple syrup
    20g tapioca starch
    1/2 tsp agar powder
    zest of a lemon
    juice of a lemon
    1/2 tsp turmeric
    For the meringue:
    100g chickpea juice(from 200g chickpea & 300g water)
    70g cane sugar
    1/2 tsp vinegar
    1 tsp vanilla extract
    Instructions:
    1. soak chickpea overnight. boil with pressure cooker for 5 minutes.
    2. mix pastry flour, maple syrup and oil and bake it for 20 minutes at 350F / 180C.
    3. put all the ingredients of lemon custard and bring to a boil or until it thickens.
    4. whip chickpea juice, vinegar and vanilla extract until it forms stiff peaks. add sugar in batches.
    5. put together everything.

    メレンゲ
    ひよこ豆の煮汁 100g
    きび砂糖 70g
    酢 小さじ1/2
    バニラエクストラクト 小さじ1
    「作り方」
    1、ひよこ豆を一晩浸水し、圧力鍋で5分ほど圧をかけます。
    2、クラスト生地の材料を全て混ぜ合わせ型に敷き詰め、180℃で20分ほど焼きます。
    3、フィリングの材料を全て混ぜ、とろみがつくまで弱火にかけます。
    4、ひよこ豆の煮汁、酢、バニラエクソトラクトを混ぜ、ハンドミキサーでツノが立つまで混ぜる。きび砂糖を数回に分けて加える。
    5、クラスト生地にフィリングを入れ、メレンゲを絞る。

    As a non-vegan/non-vegetarian person and a little terror in the kitchen when it comes to baking, I find these videos absolutely mind-blowing, lol. When you were making the merengue, all I could think was, "Oh, that's weird, that can't work," and then it did and I died a little in amazement.
    So much credit to all vegan bakers out there. I don't think I will ever be able to join your ranks.

      Dilan Fernando I did try once actually, 'cause my friend is vegan and I wanted to make him a vegan-friendly goodie. It was such an experience, lol. I find non-vegan baking much more comfortable for me.

      It's not rustic though, it's extremely well apparelled and has every tool he needs whether it is delicate, specific or heavy and big.
      I get the feeling of it being a "man cave" though. It's like paradise for cooking and I'd feel safe and happy there no matter that I'm a girl too lol

    Hi...You could try using a syrup made with water and sugar (the usual proportions are 250g sugar and 50g water, but you can adjust it to the amount of sugar you want to use), bring it to a boil and then check the temperature...when it reaches 121°C (I don't know the equivalent in °F, sorry), it'll be ready to use, just pour it slowly and still hot into the chickpeas juice while still whipping, and continue to whip it till the mixture it's cold...it works....it's called Italian meringue. I don't know if it can stand a blowtorch with that few sugar...but you can give it a try!

      Yeah cane sugar is processed with bones but not beet sugar or other types like coconut sugar.

      Celia Jean organic cane sugar is vegan. That’s what most people use.

      I guess it depends. In my country they’ve stopped doing this since the 90s. One of the biggest sugar companies uses some type of resin that doesn’t come from any animal.
      I didn’t even know about this bone thing. But after a quick search I’ve discovered that it’s not a thing where I live.

      Yeah I'm starting to really consider going vegan. I barely eat animal products anyhow and honestly, I would feel better if I cut it out. But money is a huge issue as it is difficult for me to achieve a healthy diet while being a low-income Uni student. But watching these sorts of vids kinda inspires me you know?

    This is sooo cool! Never would have thought the water from boiling chickpeas can be whipped up into peaks just like a meringue. You are one of the best innovative and experimental vegan chef/cook.

    I made this just now and it turned out so delicious. It was a bit hard to convert into U.S. Measurements but it was so worth it. My meringue actually held up and toasted perfectly. Perhaps it's because I added more sugar. I also used canned chick pea juice instead of fresh. Thanks!

    私も初めてバーナーでやってみたメレンゲは失敗でした。何回もやってみたなんですけど…やっとできるようになりました。砂糖にちょっとコーンスターチを入れます。I also really reduce the chickpea juice. 
    今ビーガンイタリアンメレンゲでします。シューガーシロップを作って、ひよこ豆ジュースを砂糖を泡立てってからバニラとコーンスターチを入れて、綺麗なメレンゲになるとシューガーシロップをゆっくり入れます。このメレンゲは簡単に焼けます。

    Lovely recipe! I've heard of chickpea juice as an egg white replacement, but this is my first time watching a video on it. Your kitchen looks AMAZING! I love it! I can't believe you did it all by yourself. Question: Why do you make two versions of some cooking videos (silent/with music)? Couldn't people who don't want to hear the music click the mute button? I can imagine publishing two videos is more work than just posting one. Also, I noticed the text at the end of the video was only in English. Do you plan to add subtitles for your Japanese-speaking (and learners!) followers?

      Memoria James some viewers told me that they don't need music but the sound of cooking. and I also like No music version so now I need to upload two versions. I think Japanese don't know what cream of tartar is and it's a long sentence, I tried to put Japanese as well but the screen was full of letters.lol maybe I should add annotation or something;)

      I actually only watch the no music version, I usually don't like cooking videos with excessive music and all the sounds in his videos are soothing so it's honestly a blessing he uploads two versions haha

    I have had good luck with vegan meringue by first reducing (as in simmering until half the water has evaporated) the chickpea 'juice'. Make as usual then you can then simply put it in a warm oven to harden the meringue. Then sprinkle some sugar over top and brulee if desired. Best~

    Made 3x the recipe for my birthday party yesterday and people loved it so much it was gone in 5 mins and I even got asked for the recipe. I also put a bit more lemon cuz around here if it´s a lemon tart/cookie/etc... it either tastes like lemon or it´s not worth it.

    I really love baking things but my mom went vegan about a year and a half ago, so it's been hard to bake more creative desserts without feeling like I"m leaving her out. Discovering your channel was probably the best thing that's happened to me this week. I can't wait to try your recipes and treat my mom to some vegan desserts!

      There's like ten trillion vegan baking, cupcakes, cookies etc cookbooks out there to use, and people websites... Absolutely anything can be made vegan. Your mom rocks X

    I love the subtle sounds in the video! Maybe a little sugar sprinkled on top would help in caramelizing the meringue.

    This was not a fail! Traditional lemon meringue pie in the States has a fairly free-formed meringue topping, which your blow torched version quite resembles. Those of us that miss meringue-based pastries are only too happy that things like this exist; thanks for your efforts and thanks for posting : )

    Ok I was so amazed at you making the meringue with chickpea juice I just wanted to cry! I'm in love with your videos I even dreamed of flaxseeds and beans last night thank you so much for showing us a more heathy , but still delicious way of eating and drinking.
