This is so much how I wish working in a restaurant was... Talking about and sharing stuff about food, learning about food, and learning things about the people I was working with. He was specifically referring to iota carrageenan in this case. And agar agar is pretty easy to come by these days, but the packet with the telephone is the easiest to use.
