Thank you for sharing this very interesting recipe. I tried it and it came out very tasty. I followed the recipe to the letter with the exception of the pasta. I found a pasta called chiocciole. it looks like a wider macaroni noodle and it's Kamut Khorason, which is an ancient wheat variety. The company who makes it has been around for nearly a century, Monogram Felicetti. When fully cooked its substantially bigger than a macaroni or shell. The texture is great. I played around with the amount of Brazil nuts since there wasn't an exact amount mentioned. I was pleasantly surprised with the okra gel. I was bracing myself for an "icky" after taste but it's similar to using sea moss gel, and there's no taste. The texture is palatable and the onions pureed with the squash makes a delightful flavor. My husband really enjoyed it as did I. We give this recipe two thumbs up!!!

That's wonderful. I bet it came out delicious. I would've added some coconut cream as well, but this is an alkaline vegan recipe. Alkaline vegans don't heat up coconut milk or oil. Vegans can add coconut cream and nutritional yeast to make it taste even better. I'm glad you enjoyed it. Thank you.

Chickpea pasta has a funny taste and aroma... at least to me. It's a bit difficult to get it to taste right (in my opinion). I still eat it though. Nothing against the manufacturers.

I love that you used okra gel as a good alternative to sea moss gel cuz that stuff be hard to find and very expensive. Ik this is a little off topic but sea moss nowadays is seriously expensive like I have a friend that lives in Jamaica and is very close to some that grows wild and he just laughs at the fact that I’ve spent 100 dollars for a pound of it
Yes, SOME of these US-based sea moss sellers are price gouging and selling fake ones too. I've changed suppliers like 3 times now. I'll be getting them myself whenever I go on vacation. It's definitely cheaper in The Caribbean
You can skip the sea moss. Don't add okra gel. The flour will still bind very well due to the hot/warm water. White Kamut flour is very sticky when wet/hydrated.

All I had was Barilla chickpea penne and I didn't have annatto oil so I used grape seed oil oil with cayenne instead.. I'm in the process of cooking it now, so I'm way too deep in to run to the store and grab Kamut pasta, so...fu$k it 😅
The texture was off and the taste was way off. Chickpea pasta is great, but not with this recipe. Kamut pasta is just like regular pasta. Tastes really good as well. I love it!

Why did you find the pure chickpea pasta nasty? I find that the texture is too hard no matter how long it’s cooked. Is kamut pasta softer?
