Helen what did I do wrong I followed your recipe for Puff Candy. I thought I was doing ok. I waited 2 hours ready to break it up. Low and behold the blooming thing came out toffee. Please help me out Helen. Thank you 🤗
Oh no, did you set it in the fridge, failing that, taste it and try to judge if you could get away with more bicarbonate soda, that way rather than wasting it, trying melting it back down and add in a little more b soda. H

First time I made I think it was too dark and smelt burnt. Second time I never whacked the heat up and just had a low heat until it looked golden brown, and it never puffed as much and went flat. What am I doing wrong
Oh jings I'll try....it needs to be boiled for a wee while at a simmer, try just 3mins once it comes to the bubble remembering that it does keep cooking even in the tin. if you have one use a heavy based pot. If it did puff up at all it is quite usual for it to fall back a little but even at that you should have air pockets. I hope this helps. H

In the U.S., this is called sponge candy or seafoam candy. I used to buy this when I was a kid- so nice to actually see the process. Great video!
