This is the simple pure ingredients I've sought to make honeycomb. Other recipes I've seen uses corn syrup, which I'm not crazy about. I'm going to make this as soon as weather cool down. It's 100°F at 10 p.m. Consider me a new subscriber. Tfs.
Finally, I was able to make honey comb .. thank you for the recipe..the only thing I have done differently is use a candy thermometer which helped me with determining the temperature at which to switch off the hob and add the baking soda...

It is sugar, so it will last for a long time if stored properly in an airtight container. At least 2 months ...that is if you don't eat it up by then :)

@IdolixWorldWide there was no water at all, do you think normal humidity in the air could be a reason? If so, it supposed to be preserved in the fridge only!!

I've now tried this recipe almost 10 times, and every time either the mixture does not reach 150 degrees Celsius, and doesn't hold it's shape after foaming up, or the honeycomb ends up really bitter..

Can it be poured in a glass pan? Can regular granulated sugar be used instead of fine sugar.

That's because of humidity. Try keeping it in the fridge or a/c room (before storing in an airtight box).

No.
baking powder is acidic and baking soda is basic, so you cant use it as a replacement

@@nazemamemon0786 Put it in your fridge, it probably hasnt set and has become sticky due to high humidity in the place you live
This works really well but corn syrup is pretty easy to make with some sugar and some other ingredients

Humidity. It's best to be kept out of the fridge and in a place wit low humidity. And to be honest it's best eaten in day 1

According to your measurements when I tried the recipe, the sugar is taking a very long time to melt, how to do this quicker?
Hers was not the best version to use. Initially at the start when it's on the hotplate shouldn't be stiring and adding the water before the sugar
Why is my hokey pokey sweating after an hour? And melts easily when when topped on a donut. What could be the problem?
That is because of humidity. Store in an airtight jar.

Keep the heat low and be patient... you will get it right 👍🏻
