Another tip if no food processor or pastry dough cutter. Freeze your butter then grate on course box grater like cheese. Mix by hand. Swap flour for cornstarch and you can add a little more of those juices if you let it masserate too long. Just make sure you use lower or lower middle rack depending on oven. Set, or bloom crust before it gets saturated.(soggy bottom) These recipes rock. And recommend anyone to follow them. Then build from them. Especially when it comes to flavorings in pie or tart type desserts. Cinnamon and vanilla are classics. But additions of freshly ground nutmeg, cloves, mace, allspice, honey, molasses etc can really make a huge difference. Just beware that some are really potent and require very little. Find them useful if your harder fruits are slightly underripe. Apples, pears, etc. The coarse sugar, TURBINADO is great as well. It's just raw sugar that's less refined but for some unknown reason cost more money. But has a ton more flavor and texture than traditional white processed sugar. But a 1-2lb box can do literally 100's of desserts and can be equally interchanged with regular sugar if done by weight. Same principles as kosher salt and table salt. Which is another thing. When it comes to baking. It's all about ratios. From bread ,cakes, to crusts. The only true and accurate way to do this is by weight. A scale is as essential as a knife. When it comes to baking. 20 bucks can get you a digital scale that does ounces, pounds, grams, kilograms, fluid ounces, ml. Etc. It really doesn't need to be accurate to the gram. It just needs to be consistent in order to keep ratio correct. It may vary a little depending on humidity. But it's a heck of a lot closer than measuring in cups. Where you can find a 20% + discrepancy per cup depending on who's measuring and product. Wish all showed both volume and weight equivalents. And would urge anyone who wants to be successful and consistent to buy a scale. Sorry for the run on. Again your channel rocks. Recipes that work!
