What I do is I ask ChatGPT to draw a character front and back and project that texture into a model, but I like your approach better

This isn't really PS1-like models though, sure, PS1 models used separated limbs, but they're also built from triangles - not triangulated quads, actual triangles, which isn't that easy to reproduce nowadays

There's not much point though, all game engines will change the game models to triangles to be able to render flat faces. We can get the aesthetic without having to make a model that's a nightmare to use.
